(Full written instructions and tips are on the blog, Mxriyum.com, link always in bio) Boiling your chicken: •6-8 Chicken leg quarters you can of-course make as much as you’d like •1 small Onion, diced •2 Bay leaves •1/2 tbsp Salt Season your chicken on a baking sheet: (before baking) •Adobo add an even layer of each seasoning on your chicken. •Paprika •Sumac Caramelized onions: •6 large Red onions, chopped 6 large onions, is enough for 4 medium sized flatbreads •2 cups High quality olive oil •5 tbsp Sumac •1 tbsp salt •1/2 – 1 tbsp Black pepper taste to preference #palestine🇵🇸 #palestinianfood #freepalestine

01:03Embracing Palestinian Cuisine as a tribute to our heritage. 🍉🕊️🇵🇸 first recipe of the series Recipe: Zataar: - 1 cup olive oil - 1 1/4 cup zaatar - 1/4 tsp salt Yeast mixture ~ - 1 cup warm water - 1 tbsp active dry yeast - 1 tbsp sugar Rest of the ingredients ~ - 7 cups AP flour - 4 tbsp dry milk - 1 tbsp salt, leveled - 2 tbsp olive oil (high quality olive oil) - 3 cups warm water Instructions: - Mix together your yeast mixture, cover with a damp paper towel, and set to the side to rise for 10 minutes. - In a large bowl, and in the rest of your ingredients. After 10 minutes add in your yeast mixture last - Begin mixing your dough with your hands, it’s going to be very tough and sticky, but that’s exactly what you want to see! This is going to be a very airy dough recipe - so we definitely don’t want our dough to be tough. A looser, sticky dough can be frustrating, but the end result is very much worth it - Continue to knead, and fold your dough over itself until it becomes a bit smoother. Once you see a smoother consistency, add a bit more olive oil & begin folding the dough over itself until it’s completely smooth - You’ll know your dough is ready to rest once you poke your finger into your dough and it bounces back at you :) - Cover your dough with a damp cloth and let it rest for 1 1/2 - 2 hours or until it’s doubled in size - After your dough has doubled in size, punch out any air bubbles (gently) and divide your dough into 14 dough balls. Cover them & let rest for 15 min - Now, add flour to your surface and to your hands. Begin flattening down your dough with your hands - thin, but not thin enough to where you dough is see through & spread a thin layer of your zataar mixture * Make sure your rocks were in the oven before you preheated it to 550°f - we want the rocks to warm up with the oven !! - gently stir stretch out your dough on the rocks, push the tray back into the bottom of the oven, close the oven door and bake for about 5 minutes - Every oven preforms differently !! Keep your eye on your bread so it doesn’t burn - Make sure to cover each price of bread as they come out of the oven with a towel. we want them to stay soft and warm
