Next wrap each chicken roll up in bacon. It should take about 2 strips, but maybe 3. After they are wrapped, just season them with a sweet bbq rub. Throw on a smoker or grill set up for indirect heat cooking at 250F. Once the chicken reaches an internal of 145F, paint each roll up with bbq sauce and let tack up. (Center Slice Taken Out for Bun) 2 Slices White American Cheese Bacon Jam Bacon Jam Ingredients: 10 Slices Bacon (Cut into 1 inch pieces) 2 Jalapeños (Diced) 1/8 cup brown sugar 1-2 Tbs Apple Cider Vinegar 1-2 Tbs Maple Syrup Directions: Start by preheating your griddle to 425F. Cook down the bacon until fat is rendered, then set aside. Add the jalapeño to the griddle followed by the bacon, sugar, acv, and maple syrup. Mix together until combined and has a jammy consistency. Mixture will thicken once set aside. Next throw down the O.G Patties and season them up. Flip, add cheese and move over to the warm side of the griddle. First get some a couple heads of garlic in the oven to roast. Preheat to 400F. Slice the top off of each head of garlic. Sprinkle with salt and olive oil. Wrap in tinfoil and place on a sheet pan in the oven for 45 min. 2. Next get the bacon ready to put in the oven. Lay down some parchment paper on a sheet pan, and place your bacon. Sprinkle on brown sugar and rub all over the bacon. Flip and repeat. Lastly sprinkle with red pepper and put into the oven at 375F for 23-25 min or until done to your liking. 3.Go ahead and make the sauce and get it into the refrigerator. Make sure to chop up and smash the roasted garlic into the sauce if stirring. (Blending the Sauce works best) 4. Next, slice the potatoes very thin and put into water to sit until ready to use. Before frying the potatoes make sure to pat them dry. Fry the potatoes until golden brown and salt immediately. 5. Now lets make the burger. Preheat your pan over medium heat. (I’m using carbon steel) Once the pan is up to temp, place your meat district SHAQ Patty down and season. After you develop a good sear, give it a flip. After about 1 min, add 3 Tbs of butter and some extra roasted garlic. Baste until the burger comes up to your desired temp. 6. Next just throw the onions and some butter into the same pan you cooked the burger in. Cook for until softened and they have a nice color. 7. All that’s left to do is assemble.
