Add ground chicken, egg, breadcrumbs, seasonings, 2 tbsp Caesar dressing & 1/4 cup parmesan to a large bowl. 2. Mix well and form golf ball sized meatballs. 3. Heat a large pan over medium heat and add avocado oil. 4. Add meatballs to pan and cook covered for about 15 minutes, flipping occasionally until meatballs are browned on both sides. 5. Toast your sub rolls in the oven on a low broil for just a couple of minutes. Cut them open if they are not already. 6. Assemble subs: Caesar dressing, lettuce, parmesan, meatballs Enjoy! 00:33(Recipe below) I could eat this Creamy Tortellini Soup every day 🤌🏻🍜 •••••• Ingredients: 1-2 chicken breasts or rotisserie chicken 4 large carrots 1 onion or shallot 1 tbsp sun dried tomatoes + oil 3 cloves garlic - minced 1 tsp each salt, pepper, Italian seasoning, garlic powder 4 cups chicken broth 1/2 cup heavy cream Juice of 1/2 lemon (whole lemon if you like it lemony!) 1/2 cup grated parmesan cheese + more for topping Chopped spinach or kale 1 package cheese tortellini Optional: red pepper flakes + chopped parsley 1. Peel and chop your carrots (small pieces), dice your onion and your sun dried tomatoes. 2. Shred or cube your chicken. 3. Add some sun dried tomato oil or olive oil to a large pot and add in chicken. (If you’re using precooked chicken, add the chicken in with the broth after the vegetables are cooked.) 4. Add carrots, sun dried tomatoes, onion and seasonings to pot. Add minced garlic after a few minutes. 5. Cook over medium heat until chicken is cooked through and carrots are soft. 6. Once the chicken is cooked through, reduce heat to low and add chicken broth, heavy cream, lemon juice, parmesan, chopped kale and tortellini. 7. Simmer on low until tortellini is soft, stirring occasionally. 8. Top with some more parmesan cheese and parsley. I highly recommend serving with a slice of toasted bread.
