Grease a 9” round (or 8” or 9” square) baking pan with cooking spray, then line with a sheet of parchment paper that covers the bottom and sides. Place onto a baking sheet; set aside. Start by preparing the apple pie filling. In a medium saucepan over medium heat, melt the butter. Add the flour and apple pie spice, and stir well. Then, add the brown sugar and stir. Add the diced apples and water, stir and cover. Cook over medium heat until the apples are soft, stirring occasionally (10-15 minutes). 01:23BROWN BUTTER PUMPKIN OATMEAL COOKIES Soft and gooey with crispy edges, and the warming flavors of brown butter and pumpkin 🍂 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (makes 12-16 cookies): Ingredients: - 1 1/2 cups all-purpose flour @Bob’s Red Mill - 1 1/2 cups rolled oats - 1 tsp cinnamon - 1 tsp pumpkin pie spice - 1/2 tsp baking soda - 1/2 tsp baking powder - 1/2 tsp salt - 1 cup (2 sticks) salted butter - 3/4 brown sugar, light or dark - 1/2 cup granulated sugar - 1/2 cup pumpkin puree - 1 large egg yolk, at room temperature - 1 1/2 tsp vanilla extract - 1 1/2 cups chocolate chips of choice (I used semi-sweet) - Optional: flaky sea salt, for topping Instructions: Start by browning the butter. Add the butter to a saucepan over medium-high heat. Allow to melt and slightly brown, while stirring continuously (~5-8 minutes). Remove from heat and set aside to cool slightly. Make the cookie dough. In a medium bowl, whisk together the flour, oats, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt. Set aside. In a separate large bowl, add in the browned butter, brown sugar, and granulated sugar. Whisk to combine. Then add the pumpkin puree, egg yolk, and vanilla, and whisk until well combined and smooth. Add the dry ingredients into the wet, and fold until just combined. Add in the chocolate chips and fold again until evenly dispersed. Cover the dough and place in the fridge to chill for at least 1-2 hours (ideally 2-4) or up to 24 hours. I let mine sit in the fridge overnight to let the flavors fully develop and prevent spreading! This also gives great texture. Once ready to bake, preheat the oven to 375F, and line 2 baking sheets with parchment paper. Use a large cookie scoop (3 tbsp) to scoop (pack the dough into the scoop with your hands) and drop balls of dough onto the baking sheet. You can let the dough sit out from the fridge for a little bit if it is too hard to scoop. Press extra chocolate chips on top if desired. Bake at 375F for 12-14 minutes, or until the middle still looks soft, but the edges start to get golden brown. Remove and let cool on the pan for 5-10 minutes, then transfer to a wire cooling rack. Sprinkle with flaky sea salt, if desired. 00:55APPLE PIE BREAD PUDDING I said what I said — you need this 🍂 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (8-10 servings): Ingredients: - 12 thick-cut slices of brioche bread or 12 brioche rolls, preferably dried out overnight, cut into 1” cubes - Optional: turbinado sugar, for topping Apple Pie Filling: - 1 3/4 lb apples of choice (~5 apples; I used a mixture of Gala and Granny Smith), peeled and diced - 4 tbsp salted butter - 2 1/2 tbsp all-purpose flour @Bob’s Red Mill - 1 tsp apple pie spice @McCormick Spices - 3/4 cup brown sugar - 1/2 cup water Custard: - 1 cup milk of choice - 1 cup heavy cream - 1 1/2 tbsp salted butter - 1/4 cup + 3 tbsp granulated sugar - Pinch of salt - 1 tsp vanilla extract - 1 tsp cinnamon - Optional: 1/2 tsp apple pie spice - 4 eggs, at room temp Instructions: Preheat the oven to 350F. Grease a 9” round (or 8” or 9” square) baking pan with cooking spray, then line with a sheet of parchment paper that covers the bottom and sides. Place onto a baking sheet; set aside. Start by preparing the apple pie filling. In a medium saucepan over medium heat, melt the butter. Add the flour and apple pie spice, and stir well. Then, add the brown sugar and stir. Add the diced apples and water, stir and cover. Cook over medium heat until the apples are soft, stirring occasionally (10-15 minutes). Remove from the heat and strain the juices, saving them to top the bread pudding later. Prepare the custard. Combine all of the ingredients for the custard, except for the eggs, in saucepan over medium-low heat. Whisk to combine until the butter is melted. Remove from the heat, add the eggs one at a time, and whisk in between each addition. DO NOT cook any longer, the custard will thicken as it cooks in the oven. Set aside. Cut the bread into 1” cubes. Place 1/3 of the bread cubes into the bottom of the prepared pan. Press down to compress. Spread about 1/3 of the apple pie filling on top of the bread cubes. Place another 1/3 of the bread cubes on top, press down, and spread another 1/3 of the apple pie filling. Finish by topping with the last 1/3 of bread cubes, and the rest of the apple pie filling. Pour the custard all over the bread, making sure all of the pieces are well-soaked. Gently press down on the bread to make sure there are no dry parts. Then, sprinkle the top with turbinado sugar if desired. Baker 350F for 35-40 minutes on a baking sheet, until the top is golden and set, but still slightly wobbly when shaken. Remove from the oven and let stand for 10 minutes, then remove from the pan. Serve warm with a scoop of vanilla ice cream and the juices from the apple pie filling. 01:27APPLE PIE ALMOND CROISSANTS The epitome of fall 🍂 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (makes 4 large, 8 mini): - 4 large or 8 mini croissants, a day or two old - Powdered sugar, for topping - Sliced almonds, for topping Apple Pie Filling: - 2 large apples of choice, peeled and cut into 1” pieces (I used Granny Smith) - 2 tbsp salted butter - 2 tbsp brown sugar - 2 tbsp maple syrup - 1/2 tsp cinnamon - 1/2 tsp apple pie spice (sub: additional cinnamon) Almond Filling: - 10 tbsp salted butter, softened - 2 eggs - 2 cups almond flour @Bob’s Red Mill - 1 cup granulated sugar - 3 tsp almond extract - 2 tsp vanilla extract - 1/2 tsp salt Simple Syrup: - 1 cup sugar - 1/2 cup water *Recipe for salted caramel is on my website through the link in my bio Instructions: Preheat the oven to 330F. Line a baking sheet with parchment paper; set aside. Start by preparing the apple pie filling. In a medium skillet over medium heat, melt the butter. Then, add the apple pieces, brown sugar, maple syrup, cinnamon, and apple pie spice. Mix until the apples are coated and the brown sugar is melted. Allow to simmer for 3-5 minutes, until the apples are just slightly cooked and the mixture is glossy. Set aside. Prepare the simple syrup by heating the sugar and water together in a small pot on the stove, just until the sugar is dissolved into the water. Set aside. Prepare the almond filling. Mix together all of the ingredients for the almond filling in a medium bowl, until well combined. Transfer the mixture to a piping bag or a ziplock baggie with the corner snipped off. Set aside. Assemble the croissants. Slice the croissants in half, and place them onto the prepared baking sheet. Brush the bottom half of each croissant generously with the simple syrup. Spoon or pipe half of the almond filling onto the bottom halves of the croissant (reserving the rest of the almond filling for topping). Divide the apple pie filling among the croissants, placing it on top of the almond filling. Place the tops on top to close all of the croissants. Brush the tops of the croissants with more simple syrup. Then, generously spoon or pipe the rest of the almond filling on top, and sprinkle with sliced almonds. Bake at 330F for 40-45 minutes until they are golden. Allow to cool slightly. Then dust with powdered sugar, and drizzle with salted caramel, if desired. 01:20BANANA BREAD DONUT BITES Soft, fluffy, incredibly easy, and utterly delicious 🤎 Expand the caption for the recipe below OR find the recipe on my website through the link in my bio! #Recipe Details (makes 16): Ingredients: - 1 1/4 cup self-rising flour (see below for homemade self-rising flour)*** - 1 1/2 tbsp granulated sugar - 1/2 cup + 2 tbsp greek yogurt, plain or vanilla - 1/4 cup mashed ripe banana - 1 tsp vanilla extract - 1/2 cup chocolate chips of choice, melted, for serving Cinnamon Sugar Coating: - 1/4 cup butter, melted - 1/2 cup + 2 tsp cinnamon ***Homemade Self-Rising Flour: - 1 1/4 cup all-purpose flour - 1 1/2 tsp baking powder - 1/4 tsp baking soda - 1/4 tsp salt Instructions: Preheat air fryer to 350F. *You can alternatively make these in the oven, they just won’t be *as* fluffy! Preheat oven to 375F and line a baking sheet with parchment paper; set aside. In a large bowl, add the self-rising flour, sugar, greek yogurt, mashed banana, and vanilla extract. Mix until well combined. The dough is going to be sticky, but just trust the process! Lay the dough on a generously floured surface. Sprinkle some more flour on top of the dough. Use your hands to knead a couple of times, until the dough becomes smooth. If the dough still seems too sticky, add 1 more tbsp of flour at a time, and continue to knead until it comes together more, and is pliable! Roll the dough out into a rectangle about 1/2” thick, the dimensions don’t have to be perfect. Divide and cut the dough into 16 pieces. Place a piece of parchment paper in the basket of your air fryer. Working in batches, transfer the dough pieces to the air fryer (I did 8 at a time). If using the oven, transfer the dough pieces to the prepared baking sheet. Brush the tops with melted butter. Air fry at 350F for 4 minutes, gently flip and air fry for another 3-4 minutes, or until golden brown. For the oven, bake at 375F for 15-18 minutes, or until golden brown. While the donut bites are baking, mix the sugar and cinnamon together in a small bowl, for the coating. Remove from donuts from the air fryer or oven and immediately toss in the cinnamon sugar mixture. Serve warm with melted chocolate of choice.
