RECIPE: Ingredients: • 225g of soft unsalted butter or margarine • 225g caster sugar • 4 large eggs • 225g self-raising flour • 2 tsp vanilla extract • 200- 250g icing sugar ( depends on how you like your consistency) • 3 tbsp boiling water • sprinkles • warm custard, to serve (optional) *Preheat the oven to 180C/160C fan/gas 4. Butter a tray/tin and line with baking paper.* For cake: Mix butter and sugar in a large bowl and beat with a whisk for a few minutes until pale and fluffy. Add the eggs one at a time, flour, and vanilla extract and beat again until you have a smooth batter. Scrape the batter into a greased tin with baking paper. Put the tin inside the oven for 30-35 mins or until a skewer inserted into the centre comes out clean. Leave the sponge to cool on a wire rack. For icing: Mix icing sugar with 3 table spoons of hot water. There should be enough water to make a thick icing. Spread the icing over the cake and sprinkle your sprinkles, lol.
