Canning water. It’s only considered crazy until a natural disaster happens and there’s no bottled water to be found. Start out by filling your jars (I just used water from our fridge) making sure to leave 1/2 inch of headspace. De-bubble and wipe your rims with white vinegar. Place your lids and your rings on - making sure to only tighten finger tip tight. Don’t crank them on! Place your jars in your water bath canner. If your water is cold, your water bath canner also needs to be cold. If your water is hot, your jars and water bath canner need to be hot. Otherwise, you risk your jars breaking. Make sure there’s at least 1-2 inches of water above your jars. To prevent jars from being cloudy, add a splash of white vinegar. Place your lid on and turn heat to high. Once it hits a rolling boil, set your timer for 20 minutes. After the 20 minutes, carefully remove the jars and place on a towel. Allow the jars to sit untouched for 12-24 hours. After the 24 hours, remove rings, and check your seals. If your seals are good, wash your jars, and label. These soft, garlicky breadsticks are one of my kids’ favorite side dishes—they absolutely LOVE when I make them! These were the first bread I baked when I was learning, and I remember being so proud of how they turned out. I don’t usually let the dough rise for these, but you can if you prefer. Easy Olive Baguettes 🥖👨🏼🍳 ⠀ RECIPE - 450 g all purpose flour (11-13% protein is best) - 50 g whole wheat flour - 375 g water - 30 g olive oil - 12 g fresh yeast (or 4 g active dry yeast) - 9 g salt - 1 tbsp rosemary, finely chopped - 250 g olives (or sun-dried tomatoes) ⠀ ❶ Mix all ingredients for the dough until well combined. Cover and let it rest at room temperature for 15 minutes. Do one set of stretch fold to strengthen the dough and ket it rest for another 15 minutes. ❷ Mix in the olives, then cover and place in the fridge. Let it ferment overnight or up to 36 hours. ❸ Preheat a baking tray (or pizza stone/steel) to 250°C. ❹ Divide the dough into 6 pieces. Gently shape each piece and twist to create some tension. (You can shape them however you like or even just cut the dough into pieces using a dough scraper.) Place on a sheet of baking paper and let them rest for 15 minutes. ❺ Carefully transfer to the preheated baking tray and bake for 15-20 minutes until deep golden brown. Adding steam in the first 8-10 minutes will help to make them more crisp and shiny, but it also works without any steam. ❻ No need to let these cool down, you can eat them right away 😉 ⠀

I know I said I was getting you guys a english muffin recipe…. Well I made so many over spring and summer I got burnt out and stopped all together. I fell into convenice and started to buy them again. I started to incorporate more bulk baking ( which Im going to try and keep up with more and more ) Bulk baking has allowed me to make things from scratch but its not something I have to do all the time! I can spend a few hours in the kitchen on a saturday and make multiple batches for multiple weeks and it doesnt add that much extra time to the schedule, like it would if I did this every week or multiple times a week like I was. I can also spend each week baking something different to have other breads like burger buns on hand as well! I love to cook mostly from scratch but I to fall trap to the convenience thats all around.
