Chocolate Covered Rice Cake Sandwich with PB & Jam😋 This is such a yummy combo😍 • Ingredients: 2 rice cakes 1 tablespoon unsweetened peanut butter (I use a pb that is 100% made of peanuts) 2 - 3 pieces of 80% dark chocolate 1/2 teaspoon coconut oil • For the strawberry chia jam: 3 big strawberries 1/2 teaspoon chia seeds • 1. Mash the strawberries 2. Add the chia seeds and stir to combine 3. Let sit for 20 minutes to let the chia seeds soak and mixture to thicken 4. Spread peanut butter onto one of the rice cakes 5. VEGAN CHOCOLATE MOUSSE 🍫 Veganuary Nr. 26🌱 This has been one of my favorite way to make vegan chocolate mousse/pudding for years and it’s so easy to make! 😋 RECIPE (6 servings, 10min prep time): -400g silken tofu -200g melted dark chocolate (most of them are vegan) -1 sachet vanilla sugar (optional) Blend until smooth. Fill in ramekins and refrigerate at least 3h. - VEGANES SCHOKOLADENMOUSSE 🍫 Veganuary Nr. 26🌱 Das ist seit Jahren eine meiner Lieblingsmethoden, veganes Schokoladenmousse/Pudding zuzubereiten, und es ist so einfach zuzubereiten! 😋 REZEPT (6 Portionen, 10 Minuten Zubereitungszeit): -400g Seidentofu -200g geschmolzene dunkle Schokolade (die meisten davon sind vegan) -1 Päckchen Vanillezucker (optional) Alles cremig mixen. 5-ingredient Peanut Butter Chocolate Oat Cups🤩 (vegan & gluten-free) • This makes 8 servings • Oat PB layer: 1 1/2 cups gluten-free oats (360 ml) 1/2 cup unsweetened peanut butter (120 ml) (I use a pb that is 100% made of peanuts) 1/4 cup maple syrup (60 ml) • Chocolate layer: 100 g / 3.5 oz. 80% dark chocolate 1 teaspoon coconut oil • 1. Mix the oats, peanut butter and maple syrup together 2. Melt the chocolate in the microwave with the coconut oil 3. Line muffin pan with muffin liners. Divide the oat mixture into 8 muffin cups and press firmly to the bottom of each cup 4. Top with the melted dark chocolate. Let set in the freezer for 1 hour and enjoy! 5. 1-minute Healthy Chocolate Chip Oatmeal Cookie (vegan & gluten-free)🤩 • Ingredients: 1/2 mashed banana 1 tablespoon unsweetened peanut butter (I use pb that is 100% made of peanuts) 2 tablespoons gluten-free oats 2 tablespoons gluten-free oat flour 1/4 teaspoon baking powder 1 tablespoon 80% dark chocolate chunks • 1. Mix the mashed banana and peanut butter together 2. Add the oats, oat flour and baking powder and stir until combined 3. Spread it on a plate lined with parchment paper. Add the dark chocolate chunks on top 4. Cook in the microwave for about 1 minute. All microwaves are different, so the cooking time might differ. I recommend checking the cookie after 1 minute and then cooking longer if needed. LEMON PISTACHIO CAKE 🍰 This recipe is by @Gina Marie Grimm and it‘s an absolute banger! Definitely give it a try this summer. 😋 Much love Maya ✨ RECIPE (11x18cm loaf pan, 1h30min prep time): -70g pistachios -90g frozen spinach -1 cup (250ml) plant milk (I used a vanilla soy milk) Blend until smooth. -170g sugar -250g flour -2 Tsp baking powder -juice and zest of 1 lemon -120g melted vegan butter or oil -a pinch of salt Stir and add in the green mixture. Carefully combine everything and transfer the batter to a loaf pan. Bake at 180C/360F for 60-70min.
