My Boursin Spinach & Sun-dried Tomato Orzo Bake is one of the easiest dishes you will find on my page! It’s simple, and creamy, and makes for the perfect side or quick weekday meal! Deets below⬇️ Serves: 4 Ingredients: 2 cups uncooked orzo - I am using: @barilla 3 garlic cloves, chopped fine 1 cup jarred sun-dried tomatoes, chopped 2 tbsp sun-dried tomato oil 1 boursin cheese @Boursin Cheese 4 cups vegetable stock without salt (if you use a stock with salt, just don’t add the salt in the recipe here, or just taste for salt halfway through cooking and add accordingly. The boursin, sun-dried tomatoes and cheese is a lot of salt already) 2 cups spinach 1.5 cups white cheddar, shredded 1/2 tsp red pepper flakes 1/2 tsp dried basil 1/2 tsp dried oregano 1/4 tsp salt 1/4 tsp pepper *Set your oven to 425 degrees. *Grab a large baking dish and add your boursin to the middle. *Add your orzo, sun-dried tomatoes, stock and seasonings to the dish. *Cover and bake for about 10 minutes. *Remove foil, stir, and add your shredded cheese and spinach and mix quickly. Tortellini w/ Spinach in a Lemon Cream Sauce🍋 this dish is just so easy to whip together and is the definition of comfort. If you need something quick, definately give this one a go! Pasta e Fagioli aka Stanley Tucci’s favorite soup 🫘🥣 I went ahead and added some ground beef to this, but you can use whatever protein you like, or keep it vegetarian. Either way, just make sure to add plenty of parmesan and lemon! Here’s how to make it: * 2 tbsp olive oil * 1 medium onion, diced * 2 medium carrots, diced * 2 celery stalks, diced * 8 cloves garlic, minced, to taste * 1 tsp dried oregano * 1 tsp dried thyme * 1 tsp red pepper flakes (optional) * Salt and pepper, to taste * 1 lb ground beef, optional * 2-3 tbsp tomato paste * 6 cups beef broth (can use chicken or vegetable broth if preferred) * 24 oz Rao’s marinara sauce * 2 (15 oz) can cannellini beans, drained and rinsed * 1 bay leaf * 1 parmesan rind (optional) * 1 cup ditalini pasta * 1 bunch or about 2 cups kale, chopped, stems removed * Juice from 1/2 lemon (to taste, plus more for garnish) * Grated Parmesan, for garnish * Fresh chives, chopped, for garnish (or preferred herb) * Freshly cracked black pepper, for garnish * Extra virgin olive oil, for drizzling * Lemon wedges, for serving 1. In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Season with salt, pepper, oregano, thyme, and red pepper flakes. Sauté for 6-8 minutes until softened. 2. In the last 5 minutes of cooking the pasta, stir in the chopped kale. Allow it to wilt and soften into the soup. 8. Stir in fresh lemon juice to taste, adjusting seasoning with more salt and pepper if needed. 9. Ladle the soup into bowls and top with freshly grated Parmesan, chopped chives, freshly cracked black pepper, a drizzle of extra virgin olive oil, and a squeeze of lemon juice. Replying to @Todo Harissa roasted carrots + chickpeas served with creamy yogurt, feta, and spicy chili oil - truly one of the best things I’ve tasted in awhile!! Could not stop eating these when I made them and once you try you’ll understand 🫶🏼 For the carrots: 6 large carrots, sliced in half lengthwise 2 tbsp olive oil 1 tbsp honey 1/4 tsp garlic powder 1/4 tsp smoked paprika Salt, to taste For the chickpeas: 1 jar/can of chickpeas 2 tbsp harissa sauce 1 tbsp olive oil Salt + pepper For serving: 1/2 cup plain greek yogurt 2-3 oz feta 1 tbsp fresh parsley, chopped 1-2 tbsp tahini Chili-infused olive oil 1. Preheat oven to 400 and line a large baking sheet with parchment paper. Add your carrots and toss with the olive oil, honey, garlic powder, smoked paprika, and a generous pinch of salt. Bake for 15 minutes. 2. Meanwhile, drain and rinse your chickpeas. Pat dry with a clean kitchen towel, then toss in a bowl with the harissa, olive oil, and salt and pepper. 3. After 15 minutes, flip all the carrots over and move to one side of the pan. Spread the chickpeas out on the other side. Bake for 20-25 minutes. 4. Allow carrots and chickpeas to cool for 5-10 minutes. Spread yogurt out on serving dish, then add carrots, chickpeas, and remaining toppings.
