GARLICKY FETA BROCCOLI CHICKEN SALAD This is one of those easy meals that packs a ton of protein, flavor, and its super easy to prep in advance. . You can serve this as is, on top of sourdough, crackers, or even lettuce cups. The ratios below are what worked for me - you can add more or use less of any ingredient to your liking. . Here is how to make it: . 1.First is the sauce. This is as easy as it gets, but can take some time in the oven if you are using garlic confit. You can either use 4tbsp roasted garlic or 4-5 tbsp garlic confit. If making confit, you can add 1/3 to 1/2 cup garlic cloves to a small ramekin, fill to the top with olive oil, cover it, and put it in the oven at 275F for 2 hours. Remove, and let cool before using. . 2.Now that we have the garlic situation sorted out, let’s make the sauce. In a food processor add 4-5 tbsp of just the garlic confit, 4oz feta, 4 tbsp greek yogurt, 2 tbsp mayo, 2 tbsp white vinegar, 1/4 cup water, a generous pinch of salt, lots of fresh cracked black pepper. Process well, taste and adjust. . 3.Then, the salad. First, finely chop 6-8oz of raw broccoli and add it to a mixing bowl. . 4.Finely dice 2 baked chicken brsts (you can use thighs or rotisserie chicken here, too). Add it to the same bowl. . 5.Finely dice 1 red onion, add it to a smaller bowl, top with cold water, and mix a couple times over 5-10 minutes. Submerging them in cold water takes away that intense, sharp bite from the raw onion. After its soaked for a few minutes, strain and add to the same bowl as broccoli and chicken. . 6.Add as much sauce to the bowl as you want, toss everything together, give it a taste and adjust as you like. PASTEL DE VERDURAS en freidora de aire, una idea de cena fácil, deliciosa y con muy pocos ingredientes, de hecho es una receta perfecta de aprovechamiento ya que puedes usar las verduras que tengas por la nevera. Hoy os traigo el tercer pastel de verduras en freidora de aire, ern realidad es una tortilla de verduras con queso que queda deliciosa. En esta ocasión el queso es opcional y puedes no ponerlo, lo único que nos aporta es el crujiente de la capa de arriba. Ingredientes: 4 huevos 2 cucharadas aceite de oliva virgen extra 1 cuchara pequeña pimentón dulce Pizca de sal 1 puñado de espinacas 3 zanahorias medianas ralladas y estrújalas para quitarles el exceso de agua cuando las rallas 1 puerro picado finito Queso emmental al gusto y opcional Elaboración: Ponemos en un papel de freidora de aire 4 huevos. En un bol pequeño, mezclamos el aceite de oliva virgen extra junto con el pimentón y la sal, mezclamos y echamos sobre los huevos. Añadimos el puerro, la zanahoria rallada y las espinacas, mezclamos todo bien y le rallamos queso. Llevamos a la freidora de aire durante 15 min a 180 grados. *Ojo, el tiempo de freidora puede depender del tamaño de los huevos y de la potencia de la misma, así que si ves que te queda poco cuajado deja unos minutos más. BREAKFAST POWER BOWL . This is a simple breakfast that will keep you on track all day. The protein and healthy fats will keep you satiated and less hungry throughout the day. Plus, if losing weight is your thing, I had a variation of this for breakfast almost everyday last week and this helped me lose 3.5lbs on my first week back on plan! . Its super easy and its so good. As always, adjust whatever you want to your liking. . Here is how I made it: . 1.Start by making your medium-boiled eggs. I bring a pot of water to a boil, then drop eggs in right out of the fridge for a total of 8 mins 25 seconds. If you want a firmer egg, go a few seconds longer. If you want it more jammy, go with 7.5 mins or so. Whatever time you decide, when they’re done, bring them out of the hot water and drop into an ice bath for a few seconds to cool down. . 2. Grab your favorite bowl and add 1 serving of cottage cheese as the layer. If you dont like the curds, you can always process it to get it to be creamier. . 3.Next, remove your eggs from the ice bath, remove the shell, slice into your favorite shape, and add on top. . 4.Slice half an avocado (65g or so) and add to the bowl. . 5.Finally, add some lower calorie flavorful additions. I like to add fresh cilantro, some super finely diced red onion, and lots of truffle hot sauce. You can add whatever you like. Cucumbers, tomato, jalapeños would be great here too, for lower calorie additions. . 6.And top with some Chile lime seasoning and everything bagel seasoning. . CHOPPED EGG SALAD . You already know by now I love quick, easy, and high protein meals. . I also feel egg salad gets a bad rap, but its actually one of my favorite things when done right. . This is a super simple recipe thats low carb, packed with a ton of protein, and it’ll keep you full. Dont like lettuce as the base? Use bell peppers, or your favorite bread - sourdough would be amazing here. . Here is how to make it: . 1.Of course this would be cleaner in a bowl, but lets get messy and chop everything up on a cutting board. We’ll start with 1 medium avocado. Cut in half, scoop out the middle, and toss the seed away. . 2.I medium-boiled 4 eggs for about 9 mins. I just remove them from the fridge, toss in boiling water for 9 mins and 20 seconds. When time is up, just rinse under cold water, and peel them. They should peel super easily. Cut in half, then add to the board with the avocado. . 3.Toss in 1 dill pickle, sliced (about 1/4 cup), 1 small shallot, 1 to 2 tbsp German or brown mustard, 1 to 2 heaping tablespoon cottage cheese, a small handful of fresh dill, a small handful of cilantro, 1 tablespoon mayo, a pinch of salt, pepper. . 4.Chop everything with a knife. If you like it on the chunkier side, chop less. If you like it on the creamier side of things, keep chopping. Smoked Breakfast Pigshots! Recipe⬇️ Grab a pack of @smithfieldbrand Thick Cut bacon and cut it in half. If you love ridiculously good meals, try this high protein, low carb chicken and rice bowl. The flavors are unbeatable and this is pure muscle fuel! I used my high protein low carb Kaizen rice for this, but it would be great with regular rice, quinoa, or cauliflower rice, too. . I used bone-in skin-on chicken thighs to make the chicken more flavorful and juicy during the cooking process, but you can always remove the skin if you prefer when it’s made. . This is how I made it: . 1.Grab 4 skin-on bone-in chicken thighs, dab dry with a paper towel and put inside a bowl. . 2.To marinade the chicken, grab a medium mixing bowl. Add 2 tbsp drizzle olive oil, 2 tbsp tomato paste, 4-5 minced garlic cloves, the zest and juice of 1 large lemon, a couple generous pinches salt, fresh cracked pepper, 1 tbsp smoked paprika, 1 tbsp oregano, 1/4-1/2 tsp cayenne pepper. . 3.Add the marinade to the chicken, and mix really well covering all sides of the chicken. Let sit for 2-6 hours or ideally, overnight. . 4.Preheat your oven to 410F. Remove chicken from fridge and let it come up to room temp before putting in oven (this takes about 30 mins) . 5.Place chicken on a wire rack and put it in the oven at 410F for 35-40 mins. . 6.While your chicken is going, make the sauce. I processed 3 tbsp of thick greek yogurt, a handful fresh mint (about 3 tbsp), 2 scallions (green and white part), 1/2 large jalapeño, 1 tbsp olive oil, the juice of half a lemon, and a couple generous pinches of salt + pepper. PERSIAN CUCUMBER SALAD . This is without a doubt one of my favorite salads - it’s the perfect combo in each bite: there is crunchy, salty, creamy in each bite and it’s SO good. . Here is how I made it: . 1.Thinly slice or dice five or six Persian cucumbers. Add them to a mason jar or salad bowl. . 2.Cube an avocado and add to the jar/bowl. You can always add more avocado, too. . 3.Thinly slice 1 scallion (you’ll both the white and green parts of this). . 4.Finely chop a handful fresh dill & fresh mint (this yield get you about 1/3 cup of each herb once chopped) . 5.Add 2oz toasted and cooled walnuts (or pistachios?!), 1.5 oz feta cheese, and 2 tbsp sumac for a nice tangy touch. . 6.Dress it up with the zest of a full lemon, the juice of 1/2 lemon, 3-4 tbsp of a GOOD olive oil, a couple pinches salt & pepper. . Process well, taste, and adjust to your preference. . 7.Remove the chicken from the oven, plate it. Again, you can serve this with whatever base you like (it would be delicious with regular rice, quinoa, or if you’re lowcarb/keto my high protein kaizen rice), some salad of choice, and this sauce. . NEED EASY FLAVORFUL PROTEIN? TRY THIS OVEN ROASTED CHICKEN . This is how you can make an incredibly flavorful, juicy chicken right in your home oven. All this needs is 5 minutes of prep, some time to soak in the flavors, and you just pop it all in the oven for easy meals all week long. . Here is how to make it: . 1.Start with 2.5 lbs boneless chicken thighs. Trim off any excess fat to the extent you’d like, completely optional. Add it to a large bowl. . 2.Let’s infuse the chicken with a ton of flavor - start by processing 1 medium yellow onion in a food processor. Add it to the chicken. . 3.Add the juice of 1 lemon, 2 heaping tbsp tomato paste, and 2 heaping tbsp greek yogurt. This will really help tenderize the chicken further and add great flavor. . 4.Lastly, the dry spices to bring everything together. Season with 3-4 pinches of salt, fresh cracked pepper, 1 tbsp thyme, 1 tbsp garlic powder, 1 tbsp urfa pepper (or Aleppo pepper or any other chili flakes). . 5. Mix it super well, and ideally let this marinate for 2-6 hours, but even better overnight, but if you want to make it right away, you can. . 6.When you’re ready to make it, preheat your oven to 425F. Remove chicken from the fridge and let it come up to room temp (about 30 mins) before popping in the oven. then pack the marinated chicken tightly into a bread loaf pan (about 8.5x4.5x2.5). Pop it into the oven for 50 mins at 425F. . 7.Remove the chicken from the oven, carefully tilt the pan onto a glass bowl or container to remove the excess juices. Pour the juices over the chicken, then tilt the pan again onto the glass bowl or container to remove the excess juices and set the juices aside. . 8.Flip the chicken onto a cutting board and cut into thin slices or strips. . 9.Serve it up however way you want - as is, on top of a salad, on a power bowl, whatever! Use bell peppers, or your favorite bread - sourdough would be amazing here. . Here is how to make it: . 1.Let’s start with the bacon. You can use regular bacon, beef bacon, or turkey bacon. I used 8oz regular bacon. For easy cleanup my favorite way to make it is to lay out the bacon on a baking sheet and pop it into the oven at 400F for 19 minutes. It comes out perfect every time. Layout paper towel on a plate and add the bacon to cool off. This also removes excess fat. . 2.Next, I medium-boiled 4 eggs for about 9 mins. GARLICKY FETA BROCCOLI CHICKEN SALAD This is one of those easy meals that packs a ton of protein, flavor, and its super easy to prep in advance. . You can serve this as is, on top of sourdough, crackers, or even lettuce cups. The ratios below are what worked for me - you can add more or use less of any ingredient to your liking. . Here is how to make it: . 1.First is the sauce. This is as easy as it gets, but can take some time in the oven if you are using garlic confit. You can either use 4tbsp roasted garlic or 4-5 tbsp garlic confit. If making confit, you can add 1/3 to 1/2 cup garlic cloves to a small ramekin, fill to the top with olive oil, cover it, and put it in the oven at 275F for 2 hours. Remove, and let cool before using. . 2.Now that we have the garlic situation sorted out, let’s make the sauce. In a food processor add 4-5 tbsp of just the garlic confit, 4oz feta, 4 tbsp greek yogurt, 2 tbsp mayo, 2 tbsp white vinegar, 1/4 cup water, a generous pinch of salt, lots of fresh cracked black pepper. Process well, taste and adjust. . 3.Then, the salad. First, finely chop 6-8oz of raw broccoli and add it to a mixing bowl. . 4.Finely dice 2 baked chicken brsts (you can use thighs or rotisserie chicken here, too). Add it to the same bowl. . 5.Finely dice 1 red onion, add it to a smaller bowl, top with cold water, and mix a couple times over 5-10 minutes. Submerging them in cold water takes away that intense, sharp bite from the raw onion. After its soaked for a few minutes, strain and add to the same bowl as broccoli and chicken. . 6.Add as much sauce to the bowl as you want, toss everything together, give it a taste and adjust as you like. Then top with some more crumbled feta, some chili flakes, or any other topping you like. . PASTEL DE VERDURAS en freidora de aire, una idea de cena fácil, deliciosa y con muy pocos ingredientes, de hecho es una receta perfecta de aprovechamiento ya que puedes usar las verduras que tengas por la nevera. Hoy os traigo el tercer pastel de verduras en freidora de aire, ern realidad es una tortilla de verduras con queso que queda deliciosa. En esta ocasión el queso es opcional y puedes no ponerlo, lo único que nos aporta es el crujiente de la capa de arriba. Ingredientes: 4 huevos 2 cucharadas aceite de oliva virgen extra 1 cuchara pequeña pimentón dulce Pizca de sal 1 puñado de espinacas 3 zanahorias medianas ralladas y estrújalas para quitarles el exceso de agua cuando las rallas 1 puerro picado finito Queso emmental al gusto y opcional Elaboración: Ponemos en un papel de freidora de aire 4 huevos. En un bol pequeño, mezclamos el aceite de oliva virgen extra junto con el pimentón y la sal, mezclamos y echamos sobre los huevos. Añadimos el puerro, la zanahoria rallada y las espinacas, mezclamos todo bien y le rallamos queso. Llevamos a la freidora de aire durante 15 min a 180 grados. *Ojo, el tiempo de freidora puede depender del tamaño de los huevos y de la potencia de la misma, así que si ves que te queda poco cuajado deja unos minutos más. BREAKFAST POWER BOWL . This is a simple breakfast that will keep you on track all day. The protein and healthy fats will keep you satiated and less hungry throughout the day. Plus, if losing weight is your thing, I had a variation of this for breakfast almost everyday last week and this helped me lose 3.5lbs on my first week back on plan! . Its super easy and its so good. As always, adjust whatever you want to your liking. . Here is how I made it: . 1.Start by making your medium-boiled eggs. I bring a pot of water to a boil, then drop eggs in right out of the fridge for a total of 8 mins 25 seconds. If you want a firmer egg, go a few seconds longer. If you want it more jammy, go with 7.5 mins or so. Whatever time you decide, when they’re done, bring them out of the hot water and drop into an ice bath for a few seconds to cool down. . 2. Grab your favorite bowl and add 1 serving of cottage cheese as the layer. If you dont like the curds, you can always process it to get it to be creamier. . 3.Next, remove your eggs from the ice bath, remove the shell, slice into your favorite shape, and add on top. . 4.Slice half an avocado (65g or so) and add to the bowl. . 5.Finally, add some lower calorie flavorful additions. I like to add fresh cilantro, some super finely diced red onion, and lots of truffle hot sauce. You can add whatever you like. Cucumbers, tomato, jalapeños would be great here too, for lower calorie additions. . 6.And top with some Chile lime seasoning and everything bagel seasoning. . CHOPPED EGG SALAD . You already know by now I love quick, easy, and high protein meals. . I also feel egg salad gets a bad rap, but its actually one of my favorite things when done right. . This is a super simple recipe thats low carb, packed with a ton of protein, and it’ll keep you full. Dont like lettuce as the base? Use bell peppers, or your favorite bread - sourdough would be amazing here. . Here is how to make it: . 1.Of course this would be cleaner in a bowl, but lets get messy and chop everything up on a cutting board. We’ll start with 1 medium avocado. Cut in half, scoop out the middle, and toss the seed away. . 2.I medium-boiled 4 eggs for about 9 mins. I just remove them from the fridge, toss in boiling water for 9 mins and 20 seconds. When time is up, just rinse under cold water, and peel them. They should peel super easily. Cut in half, then add to the board with the avocado. . 3.Toss in 1 dill pickle, sliced (about 1/4 cup), 1 small shallot, 1 to 2 tbsp German or brown mustard, 1 to 2 heaping tablespoon cottage cheese, a small handful of fresh dill, a small handful of cilantro, 1 tablespoon mayo, a pinch of salt, pepper. . 4.Chop everything with a knife. If you like it on the chunkier side, chop less. If you like it on the creamier side of things, keep chopping. Then just give it a taste and adjust as you wish. . 5.Pop these onto romaine lettuce leaves, then top with everything bagel and Chile lime seasoning. . Smoked Breakfast Pigshots! Recipe⬇️ Grab a pack of @smithfieldbrand Thick Cut bacon and cut it in half. If you love ridiculously good meals, try this high protein, low carb chicken and rice bowl. The flavors are unbeatable and this is pure muscle fuel! I used my high protein low carb Kaizen rice for this, but it would be great with regular rice, quinoa, or cauliflower rice, too. . I used bone-in skin-on chicken thighs to make the chicken more flavorful and juicy during the cooking process, but you can always remove the skin if you prefer when it’s made. . This is how I made it: . 1.Grab 4 skin-on bone-in chicken thighs, dab dry with a paper towel and put inside a bowl. . 2.To marinade the chicken, grab a medium mixing bowl. Add 2 tbsp drizzle olive oil, 2 tbsp tomato paste, 4-5 minced garlic cloves, the zest and juice of 1 large lemon, a couple generous pinches salt, fresh cracked pepper, 1 tbsp smoked paprika, 1 tbsp oregano, 1/4-1/2 tsp cayenne pepper. . 3.Add the marinade to the chicken, and mix really well covering all sides of the chicken. Let sit for 2-6 hours or ideally, overnight. . 4.Preheat your oven to 410F. Remove chicken from fridge and let it come up to room temp before putting in oven (this takes about 30 mins) . 5.Place chicken on a wire rack and put it in the oven at 410F for 35-40 mins. . 6.While your chicken is going, make the sauce. I processed 3 tbsp of thick greek yogurt, a handful fresh mint (about 3 tbsp), 2 scallions (green and white part), 1/2 large jalapeño, 1 tbsp olive oil, the juice of half a lemon, and a couple generous pinches of salt + pepper. PERSIAN CUCUMBER SALAD . This is without a doubt one of my favorite salads - it’s the perfect combo in each bite: there is crunchy, salty, creamy in each bite and it’s SO good. . Here is how I made it: . 1.Thinly slice or dice five or six Persian cucumbers. Add them to a mason jar or salad bowl. . 2.Cube an avocado and add to the jar/bowl. You can always add more avocado, too. . 3.Thinly slice 1 scallion (you’ll both the white and green parts of this). . 4.Finely chop a handful fresh dill & fresh mint (this yield get you about 1/3 cup of each herb once chopped) . 5.Add 2oz toasted and cooled walnuts (or pistachios?!), 1.5 oz feta cheese, and 2 tbsp sumac for a nice tangy touch. . 6.Dress it up with the zest of a full lemon, the juice of 1/2 lemon, 3-4 tbsp of a GOOD olive oil, a couple pinches salt & pepper. . CHICKEN THAT DOESNT SUCK. This is one of the best 1 pan chicken recipes you’ll make. The secret is the marinate that will elevate the chicken and the quick garlicky herb sauce is unbelievably good! I’m using bone-in skin-on chicken thighs to make the chicken more flavorful and juicy, but you can remove the skin if you prefer, too. I paired this with a simple salad, but it would be complete with some regular rice, quinoa, or if you’re doing lowcarb/keto, some of my lowcarb @kaizenfoodco rice. . I processed together 3 tablespoons of thick greek yogurt (or labneh), a handful of fresh mint (about 3 tablespoons), 2 scallions (green and white part), 1/2 large jalapeño, 1 tbsp olive oil, the juice of half a lemon, and a couple generous pinches of salt + pepper. Process well, taste, and adjust to your preference. . 7.Remove the chicken from the oven, plate it. Again, you can serve this with whatever base you like (it would be delicious with regular rice, quinoa, or if you’re lowcarb/keto my high protein kaizen rice), some salad of choice, and this sauce. . NEED EASY FLAVORFUL PROTEIN? TRY THIS OVEN ROASTED CHICKEN . This is how you can make an incredibly flavorful, juicy chicken right in your home oven. All this needs is 5 minutes of prep, some time to soak in the flavors, and you just pop it all in the oven for easy meals all week long. . Here is how to make it: . 1.Start with 2.5 lbs boneless chicken thighs. Trim off any excess fat to the extent you’d like, completely optional. Add it to a large bowl. . 2.Let’s infuse the chicken with a ton of flavor - start by processing 1 medium yellow onion in a food processor. Add it to the chicken. . 3.Add the juice of 1 lemon, 2 heaping tbsp tomato paste, and 2 heaping tbsp greek yogurt. This will really help tenderize the chicken further and add great flavor. . 4.Lastly, the dry spices to bring everything together. Season with 3-4 pinches of salt, fresh cracked pepper, 1 tbsp thyme, 1 tbsp garlic powder, 1 tbsp urfa pepper (or Aleppo pepper or any other chili flakes). . 5. Mix it super well, and ideally let this marinate for 2-6 hours, but even better overnight, but if you want to make it right away, you can. . 6.When you’re ready to make it, preheat your oven to 425F. Remove chicken from the fridge and let it come up to room temp (about 30 mins) before popping in the oven. then pack the marinated chicken tightly into a bread loaf pan (about 8.5x4.5x2.5). Pop it into the oven for 50 mins at 425F. . 7.Remove the chicken from the oven, carefully tilt the pan onto a glass bowl or container to remove the excess juices. Pour the juices over the chicken, then tilt the pan again onto the glass bowl or container to remove the excess juices and set the juices aside. . 8.Flip the chicken onto a cutting board and cut into thin slices or strips. . 9.Serve it up however way you want - as is, on top of a salad, on a power bowl, whatever! This stays well in the fridge in an airtight lid for 4-5 days. . I made a delicious lowcarb high protein chicken bowl with my @Kaizen Food Company ice and it was SO Good. . We’re using @Chosen Foods Classic Mayo made with avocado oil - its got simple ingredients and made from 100% pure avocado oil unlike other options. Plus, its contains good fats and we are all about eating good fats to stay full + satiated. . Dont like lettuce as the base? Use bell peppers, or your favorite bread - sourdough would be amazing here. . Here is how to make it: . 1.Let’s start with the bacon. You can use regular bacon, beef bacon, or turkey bacon. I used 8oz regular bacon. For easy cleanup my favorite way to make it is to lay out the bacon on a baking sheet and pop it into the oven at 400F for 19 minutes. It comes out perfect every time. Layout paper towel on a plate and add the bacon to cool off. This also removes excess fat. . 2.Next, I medium-boiled 4 eggs for about 9 mins. I just remove them from the fridge, toss in boiling water for 9 mins and 20 seconds. When time is up, just rinse under cold water, and peel them. They should peel super easily. . 3.Now, lets chop everything up! I added a large handful lettuce to a cutting board, the medium-boiled eggs, ½ small shallot, ½ avocado, 3-4 cherry tomatoes, a small handful baby pickles, 3 slices of the crispy bacon, 1.5 tbsp dijon mustard, 1 tsp hot sauce, a couple pinches of salt, and fresh pepper. . 4.To give this a creamy consistency, I added 2 tablespoons Chosen Foods Avocado Mayo. . 5.Chop everything with a knife. If you like it on the chunkier side, chop less. If you like it on the creamier side of things, keep chopping. CHICKEN CAESAR PASTA SALAD This is the 2nd episode of my Flippin Good Food series, and today we are making a HIGH PROTEIN, LOWCARB chicken Caesar pasta salad that is out of this world. I used my @Kaizen Food Company low carb pasta for this, but you can use any pasta that you prefer! Remember, code SHREDHAPPENS always saves you 20% on the Kaizen site💥 . Here is how I made it: . 1.We’ll start with the chicken: Grab 1lb of chicken thighs. Add them to a bowl. Drizzle with 1tbsp olive oil and the juice of 1 lemon. Season with 1 tbsp smoked paprika, 1 tsp oregano, 1 tsp onion powder, and 1/2 tsp chili flakes. Mix it really well, then place the chicken onto a baking sheet lined with parchment paper. Roast for 36 minutes at 425F. Remove, then dice them up into cubes. . 2.We’ll then make the sauce. Grab a mixing bowl. Add 3 tablespoons avocado oil mayo, 3 tablespoons thick plain greek yogurt, 1 tbsp dijon mustard, 1.5 tbsp apple cider vinegar, the juice of 1 lemon, 1 finely minced garlic clove, 3 finely diced anchovy filets (optional but so good), salt, lots of fresh cracked pepper, and 1/4 cup shredded parmesan cheese. Mix really well, taste and adjust. If the dressing is too thick, you can always thin it out with more lemon juice or a couple tablespoons water. . 3.Next, we’ll finely chop up 2 romaine lettuce. . 4.And finally, cook the pasta. To keep this high protein and lowcarb, I used 6oz of my Kaizen high protein lowcarb pasta for this, but feel free to use whatever pasta you prefer. . 5.Then assemble your salad. I placed the cooked diced chicken at the base of a large jar, added the chopped lettuce, topped with the Kaizen pasta, and flipped it onto a serving dish. . 6.Top the pasta with the dressing and more finely shredded parmesan cheese to your liking! . . Mix with 1 tbsp smoked paprika, 1 tbsp garlic powder, 1/2 tbsp sumac, 1/2 tbsp oregano, 1/2 tsp cumin, 1/4 tsp cinnamon, a few pinches of salt, & ground pepper along with 2 tbsp plain yogurt and juice of half a lemon. Mix VERY well, then ideally let this marinate for 2 hours to overnight, but if you want to make it right away you can. . 2.When you’re ready to eat, bring a pan to medium heat, add 1 tbsp avocado oil, add the chicken, and cook it through on medium heat, mixing often with a spatula. This takes about 10-12 mins depending on thickness of chicken. . 3.Make the sumac pickled red onions by cutting a large red onion in half & thinly slicing it. Add to a bowl, sprinkle with 2-3 pinches salt, 1 to 2 tbsp of sumac, and juice of 1 large lemon. CHOPPED EGG SALAD WRAP Egg salads don’t always get the love they deserve, but they’re seriously one of my favorite go-to meals. They’re protein-packed, easy to make, and so versatile. With just a few simple ingredients, you can level up the flavor in no time! This recipe is perfect for when you need something quick, delicious, and healthy. I wrapped mine in crisp iceberg lettuce for a low-carb option, but it’s just as good scooped over sourdough, your favorite bread, or even stuffed into a bell pepper. Here’s how to make it: 1️⃣ Boil your eggs: I prefer softer yolks for creaminess. Carefully drop 4 eggs straight from the fridge into boiling water for for 7.5 minutes (go 1 minute longer if you want a firmer yolk), then cool in an ice bath for 30 seconds before peeling. Slice in half.
2️⃣ Add all your ingredients to a cutting board (or bowl): Add your eggs, 1 small avocado, a quarter small red onion (or 1 shallot), 3 baby dill pickles, 2-3 sliced cherry peppers, 2 tbsp each of fresh dill and fresh mint, 1 tbsp mayo, 1/2 tbsp mustard, a pinch of salt, and cracked pepper.
3️⃣ Chop everything together: For a creamier texture, keep chopping; for chunkier, chop lightly. Taste and adjust as you like!

PERSIAN CUCUMBER SALAD . Cucumber salads are having their moment (finally!) this summer thanks to @Logan so, lets make my favorite version with the best textures and favors in each bite. You get the perfect balance of crunchy, salty, creamy in each bite with this and its SO good. . Here is how I made it: . 1.Thinly slice 6 Persian or mini cucumbers. Add to a large mason jar or bowl. . 2.Cube up 1 avocado into small chunk and add to the jar/bowl. . 3.Thinly slice 1 scallion (you’ll want the full thing - the white and green). . 4.Super finely chop a handful of fresh dill and fresh mint (about 1/3 cup of each chopped) . 5.Add 2 ounces of toasted and cooled walnuts, 1.5 oz feta cheese, and 2 tbsp sumac. . 6.Dress with the zest of a full lemon, the juice of 1/2 lemon, 3-4 tablespoons of GOOD olive oil, a couple pinches salt, and pepper. . 20 MINUTE SALMON. . Full recipe below. Checkout my ebooks in my profile if you want more delicious easy meals! . This is one of those dishes that you’ll have you going “WOW”. . It is so unbelievably easy and its SO good. . Here is how to make it: . 1.Preheat oven at 400F. . 2.Grab a sheet pan, top with parchment paper, and top with 1.5lb salmon. Season with a couple pinches salt, fresh cracked pepper, 1.5 tsp garlic powder, 1 tsp smoked paprika, and 1 tsp chili lime seasoning. If you’re feeling it, top it with a tablespoon or so of butter and pop into the oven at 400F for 16-17 minutes. . 3.To make the avocado mash, grab a mixing bowl and add 2 avocado, the zest of 1 lime, the juice of half a lime, 3 tablespoons toasted and cooled crushed walnuts, 2 tbsp freshly chopped dill, a couple pinches salt, and 1 tbsp chili lime seasoning. Mix well, taste, and adjust. . 4.To make the sumac pickled red onions, cut a large red onion in half & thinly sliced it. Add to a bowl, sprinkle with 2-3 pinches salt, 1 to 2 tbsp of sumac, and juice of 1 large lemon. Mix well, then let it sit for about 10-15 mins, stirring it a couple of times. . 5.When the salmon is done, remove from the oven, top with the avocado mash, top with pickled red onions, then add crumbled feta. . 6.Serve as is, with your favorite vegetables, with rice, quinoa, or if you’re doing something lowcarb or keto, my lowcarb Kaizen rice. . Viral Cucumber Salad Chances are you’ve seen the viral cucumber salads and for right reason by @Logan - This is one of the easiest salads you’ll make and the flavors just go SO well together. I used little Persian cucumbers because they are crispier, but you can use English or Japanese cucumbers as well. . Here is how I made it: . 1.Thinly slice 6 washed and dried Persian cucumbers. You can also use a mandolin here to make it go faster. . 2.Add thinly sliced Persian cucumbers to jar with a lid we’re going to add everything here and then give it all a shake. . 3.Add 1 or 2 fresh minced garlic cloves to the cucumbers. . 4.Dress it with 1 heaping tablespoon of velvety crunchy peanut butter (the crunchy peanut is key for crunchy), 3 tablespoons rice vinegar, 3 tablespoons soy sauce or Tamari, 1/2 tablespoon sesame oil, 1 tsp sriracha, and 2 tablespoons toasted white sesame seeds. . 5.Optional: you can add 1 to 2 tsp of sugar or monkfruit sweetner, but I left it out. . 6.Put the lid on and vigorously shake the jar to make sure everything is well incorporated. . 7.Pour the dressed cucumbers onto a serving bowl, top with more white sesame seeds and chili flakes of choice, and enjoy! .
