You’ll be directed to Whisk, which is where I post all my recipes. I’m in the process of building a blog (it’s taking me AGES!), so eventually you’ll find all my recipes there. This tutorial is a much quicker version of my original tutorials for this recipe which span 9 minutes and two videos. I’ll still keep those up of course, but I thought it was time for a new, more concise version! I’ve been blown away by the feedback so many of you have given me on this recipe. Replying to @Rikki Overnight Focaccia Measurements: 500g white bread flour (12% protein content or higher) 420ml warm water 4g (1 teaspoon) instant yeast 15ml (1 Tablespoon) extra virgin olive oil 5g (1 teaspoon) honey, or sugar or agave 10g (2 teaspoons) fine sea salt Extra virgin olive oil to line pan and drizzle Flaky sea salt to finish Toppings of choice (rosemary, olives, peppers, onions, jalapeños, cheese etc) What kind of tray? Metal baking tray is best (conducts heat better than ceramic/glass). 9x13inch or 23x33cm is what I use. It’s fine if you use a larger tray, it will just bake up thinner. How long to bake? Bake on lowest rack in oven - 220C/430F for 18-23 mins. It may take longer in your oven, so leave it in until it’s a deep golden brown, don’t worry if it takes longer than 23 mins! Why is my dough wetter than yours? Your dough may be wetter/stickier than mine, that’s because I use a very high protein bread flour (14%) and all bread flour absorbs water differently. Don’t worry if it’s wetter, it will be trickier to handle but should bake up fine! If it’s soupy, then add in a touch more flour until it looks similar to my dough. Can I use normal flour? If you want to use all-purpose flour, reduce water by 40ml, mix the dough and add some of the reserved water back in if you think the dough needs it (use my dough in video as a guide). Chocolate Chip Bread Here are the basic measurements 👇🏻 Full detailed written recipe is linked in bio 🍫 390ml warm water (approx 14oz) 1 teaspoon (5g) honey, sugar or agave 1 Tablespoon (15ml) extra virgin olive oil 1.5 teaspoons (6g) instant yeast 500g white bread flour (approx 4 cups) 2 teaspoons (10g) fine sea salt 1 cup (170g) chocolate chips Mix dough. Wait 15 mins. Stretch + fold (add half the chocolate chips). Stretch + fold (add second half of chocolate chips). Cover and proof at room temperature for 1.5 hours. Preheat oven with cast iron pot inside - 250C/480F. Shape dough and then rest (covered with bowl) for 30 mins while the pot preheats. Score, bake with lid on for 40-45 mins. Cast iron pot or Dutch Oven** should be at least 4.7 litres/ 5 quarts. Bigger than this is great too… Cool completely before cutting in, enjoy toasted with salted butter or use it for French Toast! **If you don’t have a cast iron pot, you can bake this bread on a baking tray. Cheesy Garlic Bread Bites 🧀🧄 Dough: 350 g bread flour 15 g sugar 15 g milk powder (optional) 7 g instant dry yeast 7 g salt 200 g whole milk, at room temp 1 large egg 60 g unsalted butter, softened and cut into cubes + 1 egg for egg wash Filling: 200 g shredded mozzarella (can also use block mozzarella or string cheese, cut into cubes) Garlic butter: 60 g butter 2 large cloves garlic, minced 1-2 tbsp fresh parsley, chopped Pinch of salt 1. Make the dough: •Add all the ingredients, except butter, to the bowl of your stand mixer. Knead on low speed for 10 minutes until the dough comes together. •Slowly add the butter, one cube at a time. •Once all the butter is added, knead for 10-20 more minutes at low-medium speed until the dough passes the window-pane test. •Proof for 60-90 minutes until doubled in size. 2. Shape: Once doubled, weigh the entire batch of dough and divide the weight by 20. Divide the dough into 20 pieces using a bench scraper and roll into balls. Flatten each dough ball and add cheese to the center. Wrap dough around the cheese and pinch to seal, as demonstrated in this video. Arrange bread bites in a round 12-inch/30 cm baking pan, seam-side down. Cover and proof for about 30 minutes until nice and puffy looking. 3. Bake: Preheat oven to 350F/180C. My husband suggested putting bananas in next time to make it a banana bread and I’m doing it! Ingredients: - 2 cups almond flour - 1/2 cup Greek yogurt - 4 large eggs - 1/2 teaspoon baking soda - 1/4 teaspoon salt Instructions: 1. Preheat the oven to 350°F (180°C). Grease a bread loaf pan or line it with parchment paper. 2. In one bowl, mix together the almond flour, baking soda, and salt. 3. In another bowl, whisk together the Greek yogurt and eggs until well combined. 4. Gradually add the dry ingredients into the wet ingredients, mixing well to combine. 5. Pour the batter into the prepared loaf pan and smooth the top with a spatula. 6. Bake for about 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. 7. Remove from the oven and let cool in the pan for 10 minutes. Then, remove the bread from the pan and allow it to cool completely on a wire rack. 8. Once cooled, slice the bread and serve. This bread is great for sandwiches or as a side for soups and salads. Store leftovers in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. TE DEJO LA RECETA DE MI PAN DE QUINUA👏🏻 ESPECTACULAR 🤫 sin gluten/ sin huevo/ 100% plant based. Alto en fibra y proteína. 👉🏻Receta: Mezcla en un bolw 4 cdas de linaza o lino (triturado) + 100 ml de agua caliente deja enfriar (para que se forme el mucílago) luego agrega 2 tazas de Quinua (previamente remojadas toda la noche o 3 horas) + 2 cdas de aceite de oliva +Sal o especias al gusto + 1 cda de polvo de hornear + 1/2 Tz de agua. Dejamos reposar 5 minutos y Licuamos todo súper bien así como en el video! Lleva a un molde con papel manteca y engrasado (20x10) y HORNEA A 190’ c por 50 min a 1 hora. AIRFRYER A 180’ c por 1 hora. Shallot and Garlic Naan For episode 6 in my Bread & Garlic Series, I've decided to share my recipe for shallot and garlic naan. It's great to serve with various spreads, stews, or even enjoy on its own. Ingredients: 1 ½ teaspoons instant yeast ½ cup warm water 1 ½ tablespoons granulated sugar 2 tablespoons Greek yogurt 1 egg 1 teaspoon salt 2 cups bread flour 2 ½ tablespoons unsalted butter, softened and cut into cubes For the Shallot and Garlic Butter: 4 garlic cloves, sliced 2 small shallots, chopped 1 teaspoon Sichuan chili flakes 1/4 cup cooking olive oil 4 tablespoons unsalted butter 1 tablespoon parsley, chopped 1 teaspoon salt Instructions: 1. Combine the yeast with warm water and sugar in a bowl. Let it sit for 10 minutes, until it becomes foamy and bubbles appear. 2. In a large mixing bowl, add the flour and create a well in the center. Add the yeast mixture, Greek yogurt, and egg. Mix well. 3. Knead the dough by hand or with a stand mixer for 7 minutes. 4. Add the softened butter and continue kneading for another 3 minutes, or until well combined. 5. Place the dough in an oiled bowl, cover, and let it rise for 60-90 minutes, or until it has almost doubled in size. 6. Divide the dough into 8 equal pieces and shape each piece into a ball. Place them on a lightly floured parchment paper. Sprinkle each ball with a bit of flour, cover with a kitchen towel, and let rise for about 30 minutes, or until doubled in size. 7. Meanwhile, heat the olive oil over medium heat. Add the shallots and garlic, cooking until golden brown. Once ready, add the chili flakes and mix well. Then, drain the shallots and garlic from the olive oil. 8. In a food processor, combine the butter, parsley, roasted shallot and garlic mixture, and salt. Process until well combined. Place in the fridge until the naan is ready. 9. Heat a non-stick flat pan over medium heat. 10. Roll out each dough ball into an oval/round shape on a lightly floured surface (aiming for a thickness of 0.13 – 0.16 inches) 11. Place the naan in the warm pan and cook for 1-2 minutes on each side, until golden and slightly charred. 12. Beau kneaded the dough thoroughly while I sifted some flour onto the basket, in which we let the dough rest for an hour. ⏲️ Then we tipped it onto a piece of baking paper and lightly brushed it with water while we preheated the oven and placed an enamel mold with water on the bottom. Replying to @ishuu.x0 Soft Sandwich Rolls Recipe Measurements: 390-420ml warm water 1 teaspoon honey, sugar or agave 1 Tablespoon (15ml) extra virgin olive oil 1.5 teaspoons (6g) instant yeast 500g white bread flour* 2 teaspoons (10g) fine sea salt Mix dough, cover and wait 15 mins then stretch and fold. Cover and 15 mins then stretch and fold. Cover and rest for 1.5 hours at room temp and then shape as instructed in video. Once rolls are shaped, let them rest (covered at room temp) for about 45 minutes before baking. Oven temp 230C/445F and place a vessel with water at bottom of oven to create steam in oven as it preheats. I just use a 9x5 loaf tin for this. Bake for 10 minutes with steam in, remove the water and continue baking for another 6-8 minutes or until the bread is golden brown. *500g is roughly 3.8-4 cups of flour. The flour should be fluffed up, spooned into cup and levelled to ensure it’s as accurately measured as possible. Scales are always best! Use the tutorial as a guide for consistency of dough and adjust water/flour slightly if needed Top tip: The first time you make this bread, I suggest reducing the water in the recipe to 390ml when you initially mix the dough and then slowly add in the remaining 30ml if you feel the dough needs it to reach a similar consistency to my dough in the tutorial. Courtney’s Carnivore Bread Ingredients: 12 eggs, separated 12 ounces cottage cheese 1 1/2 cups pork panko 3/4 cup salted butter, melted 1/4 teaspoon cream of tartar 1. Preheat oven to 400*F. 2. Separate the yolks from the whites. Beat the whites with the tartar until stuff peaks form, about 3 minutes. 3. Place the yolks, cottage cheese, panko and melted butter in a food processor and blend well. 4. Fold the mixture into the egg whites, careful not to deflate the whites. 5. Can mix slowly with the beater, while occasionally folding. You want to thoroughly mix while keeping everything fluffy. 6.
