let’s make a not-boring plant-based meal prep together!! 🌱🥕🥒🌿🌈 these bowls are my version of deconstructed spring roll bowls—they’re so easy to make (yay for minimal cooking required) and might just make you excited for lunch ALL day 👏 to make things even easier, I use @SideDish creamy sesame dressing as the sauce for these and it pairs perfectly!! the creamy sesame dressing is my personal fave from SideDish—it’s 100% nut-free, gluten-free, vegan, & paleo and the ingredients are a 10/10 for me. if you haven’t tried it yet, use my code JENNLUEKE10 to get 10% off any order! here’s everything you need to make four servings: 14-16oz firm tofu, cut into small cubes (I recommend pressing the tofu block for 20-30 mins) 1 tbsp arrowroot, tapioca, or corn starch 1/2 tsp salt 1/2 tsp black pepper 1/2 tsp garlic powder 1 tbsp avocado or olive oil 6oz dry thin rice noodles 1 + 1/2 cups shredded cabbage 1 + 1/2 cups shredded carrots 1 english cucumber, cut into thin strips 3 green onions, sliced 1/2 cup fresh chopped cilantro 9oz SideDish creamy sesame dressing Preheat oven to 400 degrees and line a sheet pan with parchment paper. In a mixing bowl, toss the cubed tofu in the starch, salt, black pepper, garlic powder, and oil to fully coat. Transfer the tofu to the sheet pan, spread out evenly, and bake for 20-25 minutes, tossing halfway through. Cook the rice noodles in boiling water according to package instructions. Assemble the four bowls by evenly distributing the rice noodles, cabbage, carrots, and cucumber. Add even servings of the cooked tofu on top of each one, followed by the green onions and cilantro. Pour the dressing into ~3oz sauce cups (or keep in the bottle until serving) and place in the container. Cover and refrigerate for up to five days, and pour the sauce all over before enjoying. Sunday family buffet style meal prep. Everyone in my family eats healthier all week long when I take the time to meal prep. Everything can be mixed and matched with other additional ingredients like avocado and hemp heart seeds being added when it’s time to eat. I mix and match which ingredients I prep each week, but overall I have mixed greens and vegetables, a grain that adds some protein, edamame to add protein, tofu and/or tempeh for a plant based protein, sauces, dressing or hummus, and chicken for my kids.
