You have to try my Tuscan Market Vegetable Soup: Recipe 1 can chickpeas 1 zucchini 3 pieces celery 1 small onion 3/4 can tomato paste 1 tsp dried oregano 1 tsp salt 1/4-1/2 tsp pepper 1 1/2 cups water or broth 2 tbsp garlic olive oil Add everything to a pot, stir, and then bring to a boil. Remaking my Mama’s Chicken Vegetable Soup for Iftar! This soup always reminds me of Ramadan because my Mama always made soup as our starter for Iftar. Filled with tons of veggies, protein and fiber, this soup has all the goodness to replenish your body after a long day of fasting! Super easy to make and it just tastes incredible! Chicken Vegetable Soup Ingredients (use as much or as little as you desire!) 3-4 Chicken Breast 3 Medium Carrots 3 Celery Stocks 1 Large Onion 1 Large Tomato 2 Zucchinis 2 Medium Potatoes 1.5 cups Butternut Squash 4 Garlic cloves 1 de-seeded Jalapeños 3/4 cup of red lentils 2 boxes of low-sodium chicken or veggie broth (or enough liquid to cover everything - water + bouillon cubes work too) 1/3 cup of GOOD Extra Virgin Olive Oil 1 tbsp Cumin Powder 1 tbsp Corriander Powder 2 tsp Smoked Paprika 2 tsp turmeric powder 2 tsp dried oregano 2 tsp black pepper 1 tbsp sea salt (to taste) 1 tsp red chili flakes 1 lemon, juiced Handful of fresh parsley or cilantro Method: Chop all your veggies and chicken and add to a pot on medium-high heat. Add olive oil, spices and chicken broth and add enough liquid until veggies/chicken is fully submerged. Heat until it bubbles and boils, turn down heat to medium-low, cover and simmer for at least 30 minutes or until chicken is fully cooked and veggies are tender. Squeeze lemon juice into soup and top with fresh cilantro. Using a blender or immersion blender, blitz the soup until your desired texture (I like to leave chunks of chicken and veggies in mine for texture). Chorizo Vegetable Soup 🍲 1 lb of chorizo 1 onion diced 2 carrot peeled and diced 2 celery sticks diced 5 Yukon gold potatoes chopped 2 tbsp tomato paste 1/4 cup frozen peas 1/3 cup frozen corn 1 can of cannaleni beans 4 cloves garlic 1 trap crushed red pepper 2 tap oregano 1 tsp garlic salt 2 tsp smoked paprika 5 cups vegetable broth 1. Start by cooking your celery, carrot, and onion with 1 tbsp EVOO until soft. About 7-8 minutes. 2. Remove the vegetables and add in the chorizo. Cook on medium high. You want the bottom to brown and bit and the chorizo to brown too. 3. Add in tomato paste, garlic, and herbs. Cook for about 2-3 minutes. 4. Add in your broth a little at a time scraping up the brown bits on the bottom. Add in all the broth. 5. Throw your corn, peas, beans, and potatoes in. Cover and simmer for 10-15 minutes. Or until your puff pastries are done! Everything soup. This soup is a fridge clean out classic, anything and everything goes here! The base flavours are the same and you can easily sub in different veg or even add some left over roast chook, bacon, ham or roast beef ( also noone has roast beef leftover these days that’s defs a luxury) Ingredients: 2 Tbsp EVOO 1 large brown onion finely diced 2 medium carrots finely diced 3 sticks of celery finely diced 3-30 cloves of garlic minced 2-3 cups of starchy leftover veg cut into cubes ( I used sweet potatoes, capsicum and potatoes but you can even use pumpkin, different squashes, parsnips the options are endless) 2 tsp Italian herb mix 1 tsp oregano 2 bay leaves 1/4 tsp chili flakes (optional) 2 tsp any curry powder 800ml crushed canned tomatoes or similar 2ish litres of stock (any) 2-3 cups of green veg (I used asparagus, beans, zucchinis but you can add spinach, leafy greens, peas, broccoli, cauliflower or anything really) salt and pepper to season. In a heavy pot add EVOO, onion, carrot and celery on medium. Cook for 3-5 minutes until the veg begins to soften. add garlic and cook for a further minute stirring. Add the starchy veg and cook stirring for about 3-5 minutes. in goes your herbs and curry powder, tomato and stock! cook covered on medium for 20 minutes. add green veg and cook on medium uncovered for 5 minutes. season and serve you can also add bacon before the onions or left over meats after the starchy veg if you want. Play around this is just a guide but the curry powder really helps add some excitement to a very basic veg dish! This recipe can easily be halved, this was just how much I had. Let your pepper fry well before adding your vegetable 4. Blanch your vegetables (even though some people say it removes the nutrients) but that’s how Efo riro is cooked! Ok, what are you having for dinner tonight because I think this Loaded Mercimek Çorbası (Lentil Soup) is the one! Ingredients: 300g split red lentils, washed + drained 75 g brown basmati rice, washed + drained 75g quinoa, washed + drained 3 litres cold water 1 large sweet potato, finely grated 2 large carrots, finely diced 2 celery sticks, finely diced 1 large onion, finely diced 1 chicken or vegetable stock cube 500 ml boiling water 4 tbsp fresh lemon juice 1 tsp salt 1/2 tsp coarse black pepper To serve Pul biber Dried mint Grilled black olives Toasted bread Fried hellim cubes Lemon wedges Sea salt Cracked black pepper Method: Add the drained lentils, rice and quinoa to a large pan with the 3 litres of cold water. Place the pan over a high heat and bring to the boil for 5 minutes, skimming and discarding the foam that forms on the top. Reduce the heat a little and cook for 20 mins until the soup starts to thicken. Dissolve the stock cube in the boiling water in a heatproof jug. Add the stock to the pan, the the vegetables and cook for a further 10-15 minutes until the vegetables are tender. Add the lemon juice, salt and black pepper to the soup pan, give everything a gentle stir, cook for a further minute and then remove one-third of the soup and blitz carefully in a food processor. Return the blended soup back to the pan. Serve bowls of the soup topped with the croutons, hellim, a sprinkling of pul biber, dried mint, grilled black olives, l an extra squeeze of lemon juice. The base flavours are the same and you can easily sub in different veg or even add some left over roast chook, bacon, ham or roast beef ( also noone has roast beef leftover these days that’s defs a luxury) Ingredients: 2 Tbsp EVOO 1 large brown onion finely diced 2 medium carrots finely diced 3 sticks of celery finely diced 3-30 cloves of garlic minced 2-3 cups of starchy leftover veg cut into cubes ( I used sweet potatoes, capsicum and potatoes but you can even use pumpkin, different squashes, parsnips the options are endless) 2 tsp Italian herb mix 1 tsp oregano 2 bay leaves 1/4 tsp chili flakes (optional) 2 tsp any curry powder 800ml crushed canned tomatoes or similar 2ish litres of stock (any) 2-3 cups of green veg (I used asparagus, beans, zucchinis but you can add spinach, leafy greens, peas, broccoli, cauliflower or anything really) salt and pepper to season. In a heavy pot add EVOO, onion, carrot and celery on medium. Cook for 3-5 minutes until the veg begins to soften. add garlic and cook for a further minute stirring. Add the starchy veg and cook stirring for about 3-5 minutes. in goes your herbs and curry powder, tomato and stock! cook covered on medium for 20 minutes. add green veg and cook on medium uncovered for 5 minutes. season and serve you can also add bacon before the onions or left over meats after the starchy veg if you want. Play around this is just a guide but the curry powder really helps add some excitement to a very basic veg dish! This recipe can easily be halved, this was just how much I had. Let your pepper fry well before adding your vegetable 4. Blanch your vegetables (even though some people say it removes the nutrients) but that’s how Efo riro is cooked! Ok, what are you having for dinner tonight because I think this Loaded Mercimek Çorbası (Lentil Soup) is the one! Ingredients: 300g split red lentils, washed + drained 75 g brown basmati rice, washed + drained 75g quinoa, washed + drained 3 litres cold water 1 large sweet potato, finely grated 2 large carrots, finely diced 2 celery sticks, finely diced 1 large onion, finely diced 1 chicken or vegetable stock cube 500 ml boiling water 4 tbsp fresh lemon juice 1 tsp salt 1/2 tsp coarse black pepper To serve Pul biber Dried mint Grilled black olives Toasted bread Fried hellim cubes Lemon wedges Sea salt Cracked black pepper Method: Add the drained lentils, rice and quinoa to a large pan with the 3 litres of cold water. Place the pan over a high heat and bring to the boil for 5 minutes, skimming and discarding the foam that forms on the top. Reduce the heat a little and cook for 20 mins until the soup starts to thicken. Dissolve the stock cube in the boiling water in a heatproof jug. Add the stock to the pan, the the vegetables and cook for a further 10-15 minutes until the vegetables are tender. Add the lemon juice, salt and black pepper to the soup pan, give everything a gentle stir, cook for a further minute and then remove one-third of the soup and blitz carefully in a food processor. Return the blended soup back to the pan. Serve bowls of the soup topped with the croutons, hellim, a sprinkling of pul biber, dried mint, grilled black olives, l an extra squeeze of lemon juice. Vegetable Soup Ingredients • 2 lbs beef stew meat (cubed) • 1 stick unsalted butter • 1/3 cup avocado oil • 1 large yellow onion (diced) • 2 tbsp flour • Garlic salt, pepper, Hardcore Carnivore “Cajun” (to taste) • 2 cans tomato sauce • 1 can tomato paste • 3 cans diced tomatoes • 2 cups of water • 1 large russet potato (peeled, cubed) • 2 ribs of celery (sliced, bite size) • 3 carrots (peeled, bite size) • ½ head cauliflower sliced • 3 cups broccoli florets • ½ head green cabbage (chopped medium) • 1 can Lima beans (drained) • 1 can black eyed peas (drained) • 1 can sweet corn (drained) • Hot sauce to taste (I used Killer Hogs) Directions: 1. Coat cubed meat in seasonings/flour listed. 2. Add 1/3 cup of avacado oil to large pot/Magnalite 3. Brown meat on medium/high heat in large pot; add additional flour to coat meat (this helps brown- be careful, may need to reduce heat to prevent burning). Place cooked meat to the side. 4. In same large pot, melt 1 stick of unsalted butter. Add onions to melted butter. Optional: mash onions, helps with deglazing pot. 5. Add meat/drippings back to the pot. 6. Add all canned tomato products 7. Add broccoli, cauliflower, celery, potatoes, carrots, and cabbage. 8. Add 2 cups of water (or more- vegetables should almost be submerged). 9. Add sweet corn (drained), lima beans (drained), and black eyed peas (drained). 10. Cover and bring to a boil (around 20 minutes, stirring occasionally) 11. Add hot sauce (Killer Hogs), Hardcore Carnivore “Cajun”, garlic salt, and pepper. Stir well. 12. Cover and reduce to a simmer. Soup season is approaching 💕 Here is the recipe for Vegetable Soup -2 lbs beef stew meat or chuck roast, cut into cubes -2 tbsp neutral oil -1 yellow onion, diced -1-2 carrots, peeled and diced -2 celery stalks, diced -1/4 cup green onions, chopped -6 cloves garlic, minced -1 tbsp salt or to taste -1 tsp pepper or to taste -1 tbsp paprika -1 tsp dried thyme -1 tsp dried oregano -1 tsp crushed red pepper flakes (optional) -1 can diced tomatoes -3 bay leaves -5-6 cups beef broth -2 bags of mixed vegetables (mix of corn, green beans, carrots etc) -1 lb russet potatoes, peeled and diced -Fresh parsley to garnish 1. Add oil to a preheated pot. Brown beef in batches over medium high heat. 2. Sauté onion, celery, carrots, green onions until soft, 4-5 minutes. 3. Add garlic, thyme, oregano, and crushed red pepper flakes and sauté 60 seconds. 4. Add diced tomatoes, salt, pepper, paprika, and bay leaves. 5. Add beef broth. 6. Bring to a simmer but not a full rolling boil. Cover and turn the heat down to low. 7. Cook for 3-4 hours or until beef is fork tender. 8. In the last 20 minutes, add the mixed vegetables and potatoes. 9. Taste and add more salt and pepper if needed. Add parsley * For a thicker consistency, add a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water whisked together). Recipe below! Canh mong toi or Vietnamese malabar spinach soup is my favorite way to eat veggies ❤️ Ingredients * 500g malabar spinach (remove any hard tough stems and cut into small pieces * 250 g shrimp (minced and seasoned with salt and pepper) * 8c water or veggie/chicken stock * 5 cloves garlic (mince) * 1 tbsp fish sauce * 1-2 tsp chicken or mushroom bouillon powder * Salt and pepper to taste * Neutral flavored oil 1. Saute garlic till slightly fragrant and add shrimp 2. Add water or vegetable/chicken stock. If you use stock, adjust seasoning accordingly (adding less if needed) 3. Add fish sauce, bouillon powder, salt, and pepper to taste 4. Bring to a boil and add malabar spinach. Cook till spinach is tender 5-10min 5. Serve with rice!
