Day 23/20- Penne all’Arrabbiata Ingredients: - 250g penne - 400g Tinned tomato - Olive oil - Fresh parsley, stems and leaves separate - 4 cloves Garlic, 2 rough cut, 2 minced - 2 tsp Chilli flakes - Parmesan cheese for garnish 1. Pour enough oil to coat the bottom of a frying pan and add rough chopped garlic and parsley stems. Cook for 2-3 mins on low heat then remove from the oil and discard 2. Add minced garlic and chilli flakes to the flavoured oil and cook for a few minutes to toast the garlic 3. Add tinned tomato’s and crush (if they are whole). Day 8/20- Mussels Arrabbiata Ingredients: - 8-10 frozen green mussels - 200g Linguine - 4 cloves Garlic, minced - Parsley for garnish - Parmesan cheese for garnish - 1/2 cup dry White wine - 50g unsalted butter - 1 tsp Salt - 1 tsp black Pepper - 1 tbsp fresh thyme - 1 tbsp Chilli flakes - 400g crushed tomato’s 1. De-beard mussels by pulling out the grassy, hair like strands sticking out of the base of the shell and set aside 2. Heat up a large saucepan on medium/high before adding the butter, thyme, garlic, chilli flakes and white wine, bringing it up to a simmer 3. Drop in the mussels and cover with a lid, allowing to steam for 3-5 minutes or until the shells open. If some of the mussels don’t open, throw them away 4. Remove opened mussels from the pot and set aside then add crushed tomato’s, stirring to combine. Add any extra salt, pepper or chilli flakes to taste at this stage 5. Bring the sauce to a simmer and hold it there for 10-12 minutes or until it has reduced by 30% 6. Boil linguine in heavily seasoned water until Al dente then remove from the water, along with 1/2-1 cup of pasta water, to finish cooking in the red sauce 7. Mussels in Arrabbiata Sauce 🌶️ Ingredients: 1 red chili pepper, take the seeds out & leave some in (If you want it less spicy remove all the seeds) 1 lb mussels 1 lb linguine (2) 28 oz cans San Marzano whole peeled tomatoes 12 garlic cloves, chopped 1/4 cup olive oil 3/4 cup white wine 2 ladles of pasta water (about 2/3 cup) Pinch of sugar Salt & pepper to taste A few pieces of basil ripped up 1/4 cup fresh parsley, chopped Most parsley & basil for garnish Grated pecorino romano & butter for pasta garnish Directions: In a bowl of water clean your mussels and pull out the beards. Set aside. In a dutch oven or pot add olive oil. Then add in the red chili pepper, garlic, salt & pepper, and sauté fragrant. Deglaze with white wine and let that simmer 2-3 minutes so the alcohol can burn out. Add in both cans of whole peeled tomatoes, crush the tomatoes up, add some more salt & pepper to taste, and a pinch of sugar. Cover the pan with the lid keeping it slightly ajar and let that cook on medium heat for about 15 minutes. Bring a pot of water to boil, salt the water, and add linguine. Cook until al dente, Set aside about 2/3 cup of pasta water. Once it's been 15 minutes, to the sauce add basil, parsley, pasta water, and the mussels. Let that come to a boil, then lower it to a simmer, and cover with the lid completely. Once the mussels are all open they are done. Add butter & pecorino romano to the pasta.
