Esistono tante tipologie di pizza, presto vedrete anche quella con cornicione, morbida morbida. Pizza croccante (per 8 panetti) Per il poolish: 500g farina forte 450g acqua 0,5g lievito di birra fresco Mescolare tutto insieme in una ciotola per ottenere una pastella densa. Far riposare a temperatura ambiente per 16h Per il rinfresco: 500g farina debole 3g lievito di birra fresco 100g acqua 20g sale 40g olio evo Sbriciolare il lievito nella farina. Aggiungete il poolish e l’acqua. Impastare fino a incordatura. Unire poi il sale. Infine l’olio. Ottenuto un impasto compatto e ben incordato, lasciare riposare coperto 1h.
