Ep 5 || What happens if we make a dish combining.. #focaccia #chillioil Focaccia: 350g flour 300ml warm water 1 tsp instant yeast 1 tsp honey salt Combine the salt and flour to a large bowl and set aside. Combine the remaining ingredients the pour into the flour mixture. Mix the dry and wet ingredients together until everything is combined. Cover with a towel and set aside for an hour on the bench or overnight in the fridge. Chilli oil: 1 cup neutral oil, like vegetable or canola 8 cloves garlic, minced 1 tsp fennel seeds 1 cinnamon stick 2 star anise 2 tsp Sichuan peppercorns ½ cup chilli flakes 2 tbsp sesame seeds salt to taste Add everything up to the Sichuan peppercorns to a small saucepan over medium heat. Allow to sizzle until the garlic just starts to brown and the oil becomes very fragrant, about 5 minutes. Combine the chilli flakes, sesame seeds and salt to a heat proof bowl. As soon as the garlic is just golden, pour the oil into the chilli flake mix. Set aside. Pour a few tablespoons of chilli oil into the base of a baking tray. Pour out the dough and stretch is to fill to the corners as best as you can. Cover again and allow to proof for another hour or 2 on the bench. Once puffed up, add another few tbsps of chilli oil to the top of the dough and quickly dimple. Bake at 200C for around 20-30 minutes or until golden on top.

Replying to @Rikki Overnight Focaccia Measurements: 500g white bread flour (12% protein content or higher) 420ml warm water 4g (1 teaspoon) instant yeast 15ml (1 Tablespoon) extra virgin olive oil 5g (1 teaspoon) honey, or sugar or agave 10g (2 teaspoons) fine sea salt Extra virgin olive oil to line pan and drizzle Flaky sea salt to finish Toppings of choice (rosemary, olives, peppers, onions, jalapeños, cheese etc) What kind of tray? Metal baking tray is best (conducts heat better than ceramic/glass). 9x13inch or 23x33cm is what I use. It’s fine if you use a larger tray, it will just bake up thinner. How long to bake? Bake on lowest rack in oven - 220C/430F for 18-23 mins. It may take longer in your oven, so leave it in until it’s a deep golden brown, don’t worry if it takes longer than 23 mins! Why is my dough wetter than yours? Your dough may be wetter/stickier than mine, that’s because I use a very high protein bread flour (14%) and all bread flour absorbs water differently. Don’t worry if it’s wetter, it will be trickier to handle but should bake up fine! If it’s soupy, then add in a touch more flour until it looks similar to my dough. Can I use normal flour? If you want to use all-purpose flour, reduce water by 40ml, mix the dough and add some of the reserved water back in if you think the dough needs it (use my dough in video as a guide). Focaccia Sin amasar y sin masa madre. Tiene un levado de 24 hs en heladera. Se animan a hacerlo? Es una masa que tiene mucha hidratación y es muy blandita, el resultado, un manjar. Para 2 focaccias Ingredientes: ✔️1060 g de harina 00 de fuerza( podés usar 000) ✔900 ml de agua a temp ambiente ✔️1 cdita de sal ( 10 g) ✔️8 g de levadura seca o de fresca 20 g Extras: ✔️10 tomates cherry ✔Aceite de oliva ✔️sal gruesa ✔️romero fresco En un bol añadir la harina, la sal, l levadura, el agua y con espátula unir todo. Con las manos mojadas de agua vas a plegar( doblarla como muestro en el video) la masa 4 veces. Si no te mojas las manos te será imposible manipular la masa ya que es re blanda Tapar y dejar reposar 20 minutos. Vas a plegar y reposar a temp ambiente. Se hace 4 veces en total siempre tapando y reposando 20 min En un bol aceitado de oliva colocar la masa, la vas a tapar con una bolsa y lo vas a llevar a la heladera por 24 horas. Puede estar hasta 72 horas, pero desgasificarla, osea aplastarla para sacar el aire cada 24) Precalentar horno a 230 C° ésto puede tardar hasta 30 min. Aceitar dos placas y colocar 3 cdas de aceite en cada una y esparcir bien. Yo use una placa de silicona Dividir la masa en dos , Colocar las masas, darle forma, dejar reposar tapado 20 min. Con los dedos mojados marcar la masa Colocar 4 cdas de aceite de oliva encima de la masa y hacer jueguitos con los dedos, agregar los tomates, el romero y la sal. Con esos ingredientes era obvio una #focaccia y una crema de tomates 🍅, o no🤔? Focaccia 500 g de harina de fuerza (harina de panadería) 420 ml de agua 5 grs levadura 7 grs de miel 15 ml aceite de oliva 10 grs de sal Para un buen resultado de esta masa es indispensable dejarla reposar por mínimo 12 horas (yo la dejé 16). Lo bueno es que no necesitas amasar, solo hacer pliegues en dos tandas con descanso de 10 minutos. Luego cubres con oliva y dejas reposar, idealmente de un día para otro en refrigerador tapada con papel alusa. Luego del tiempo de reposo, llevas la masa a una bandeja de horno del tamaño que desees la focaccia, debes considerar como mínimo un dedo de grosor, estiras y dejas reposar 2 horas más antes de agregar los ingredientes de decoración. Finalmente, con los dedos con oliva, presionas la masa y vas dejando la marca de ellos. Decoras con los vegetales de tu elección y llevas al horno a 220 grados por 18 a 22 minutos. Crema de tomates 5 tomates maduros 1 cebolla 1 cabeza de ajo 200 ml crema de leche (nata) 1 taza de caldo de verduras Sal Pimienta Albahaca seca Llevar a horno las verduras cortadas en 1/4 (gajos grandes) y a la cabeza de ajo cortas la parte superior para poder asarlo mejor, le agregas aceite de oliva y condimentar con sal, pimienta, albahaca seca a una temperatura de 200 grados por 15 minutos. Si le falta al ajo, puedes envolverlo en papel aluminio con un poco de oliva y dejar 10 min más en el horno. Luego llevar todas las verduras asadas a la licuadora. Traspasar la mezcla a un sartén y agregar la crema y el caldo de verduras y cocinas 1 minuto a fuego medio. Rectificar sal. Para el montaje puedes agregar queso rallado o una burrata di búfala como lo hice yo 😄👋

Diventerà la vostra tasca commestibile dove potrete infilarci tutto ciò che amate (super anche da solo ) •250 g di farina di grano tenero (io ho scelto Petra 0102 HP di tipo 0, 170 ml circa di acqua, 10 g di lievito di birra, 1 cucchiaino di sale, 1 cucchiaino di zucchero Per farcirlo io ho scelto: tempeh glassato (basta semplicemente soffriggere in olio di semi delle fettine di tempeh precedentemente infarinate) e poi glassarle con salsa di soia e sciroppo d’acero. W końcu taki przepis na FOCACCIA dzięki któremu zawsze wam wyjdzie. Bądźcie uważni i odkryjecie nowy wymiar smaku :) Jest to rodzaj focaccia wysokiej, puszystej i lekko chrupiącej w skorupce. A teraz zapisz przepis i lecimy z tym! -Składniki: Do ciasta: 400g mąka chlebowa 350g woda 8g sól 6g droździe świeże 14g oliwa z oliwek Do dekorowania: Pomidorki koktailowe Pesto bazyliowe Rozmaryn Czosnek Sól wędzona Jak to zrobić: Dobrze Wymieszać wszystkie składniki do ciasta w misce i przykryć na 30 minut. Odkryc ciasto i „składać” go mokrymi rękami z góry do dołu, dołu do góry, lewej do prawej, prawej do lewej 3-4 razy. Przykryć na 30 minut i powtórzyć ten proces jeszcze 4 razy. Na koniec zafoliowac miskę i dać do lodowki na 24 godzin. Smarować blaszkę bogata ilością oliwy. Możecie dla bespieczenstwa dać papier do pieczenia. Dać do blaszki ciasto i przykryć go aż prawie się podwoj w rozmiarze, lub aż miną maksymalnie 2 godziny. Odkryć, dodać oliwe, pesto, oliwki i macać w tym palne aby zrobić wgłębienia. PIZZETTE E FOCACCINE Aperitivo 🐝 🍕 che sia un aperitivo o per Merenda, sono ottime per tutte le ore 🤤 Per la RICETTA ti SERVIRÀ: Farina 00🌾 250 Acqua 💦 175g Olio 30g Sale 🧂 8g Lievito secco 3g Zucchero 3g Passata di pomodoro 🥫 Mozzarella Olive 🫒 PROCEDIMENTO: Unisci Farina, zucchero e lievito e impasta versando a filo l’acqua. Una volta che l’impasto è liscio unisci olio e successivamente il sale. Lascia lievitare fino al raddoppio (circa 2 ore emmezza) e dividi in palline da 40/50 grammi, condisci con pomodoro o olive e lascia lievitare per 45/1 ora.
