Legit, so so satisfying! • For the brussels: 1 1/2 lb brussels, trimmed/halved (divided) 5 tbsp olive oil, divided 1/2 tsp salt 1/2 tsp garlic powder 1/2 tsp paprika 1 tbsp maple syrup • For the chickpeas: 1 15 oz can chickpeas, rinsed and drained 1 tbsp olive oil 1/2 tsp salt 1/2 tsp garlic powder 1/2 tsp paprika • For the cashew whip: 1 cup raw cashews 5 tbsp boiling water 1 tsp maple syrup 1/2 tsp lemon juice 1/4 tsp salt (or more to taste) 1/4 tsp garlic powder 1/2 tsp cumin 1/4 tsp pepper • For serving: 1/2 cup halved grapes Chopped parsley, optional Pepper, optional • 1️⃣Preheat oven to 450. Place a sheet pan in the oven while it preheats.2️⃣Make the chickpeas. Friends: this one is just too good and so easy to make 🫶 • 2 lbs Brussels sprouts, finely shredded 1 15-oz can quartered artichoke hearts, drained and patted dry 5 tbsp olive oil, divided 1 1/2 tsp salt, divided 1/2 tsp pepper, divided 1/3 cup shredded Parmesan cheese 3/4 cup chopped arugula 1/3 cup shaved Parmesan, torn into pieces 1/2 cup pitted olives, crushed and chopped 1 tsp lemon zest Hot honey Pepitas 1️⃣Preheat the oven to 425. 2️⃣Add the brussels to a large sheet pan (or 2 if needed), add 4 tablespoons of olive oil, teaspoon salt and 1/2 teaspoon pepper. It also happens to be fantastic for meal prep; the brussels soften just a bit and the salad gets more and more delicious by the day! Makes 4 meal salads or 8 servings 1 1/2 lbs brussels sprouts, shaved (approx 6 cups) 1 cup pomegranate arils 1 large red pear, diced 1/2 cup pepitas (pumpkin seeds) 1/2 cup parmigiano reggiano, finely grated 1/2 cup fresh parsley, chopped Dressing: 1/3 cup extra virgin olive oil 1/4 cup lemon juice (2 lemons) 1 large shallot, finely diced 1 tsp kosher salt 1/2 tsp ground black pepper For the dressing, whisk together the olive oil, lemon juice, shallot, salt and pepper. SHAVED BRUSSELS SALAD WITH ORANGE-HONEY-PAPRIKA VINAIGRETTE!! Brussels, goat cheese, savory rosemary roasted pecans, dried apricots, and this zesty orange dressing! • For the dressing: Juice of one large orange 1/3 cup olive oil 1 1/2 tbsp honey 2 tbsp white wine vinegar 1 tbsp whole grain mustard 1/2 tsp salt 1/2 tsp paprika 2 tsp orange zest 1 garlic clove, minced • For the pecans: 1/3 cup pecans 1-2 tsp olive oil 1/2 tbsp honey 1/4 tsp salt Pepper to taste 1 tsp dried rosemary • For the salad: 1 1/2 lbs Brussels sprouts, shredded 1/2 cup chopped dried apricots 3/4 cup chopped red onion 3/4 cup goat cheese crumbles 1/2 cup chopped fresh parsley Salt • 1️⃣Preheat the oven to 400. 2️⃣Make the dressing. Add all ingredients to a jar with a lid. Add the lid and shake vigorously until well combined. 3️⃣Make the pecans. Add all ingredients and mix to combine. This is the ULTIMATE SHAVED BRUSSELS SPROUTS SALAD with lemon shallot vinaigrette and it is a 12/10—like most definitely one of the best salads I have EVER made and it will go front and center on my blog :). This salad is easy to make and a total crowd pleaser—a great one to serve at all your holiday gatherings this year! It also happens to be fantastic for meal prep; the brussels soften just a bit and the salad gets more and more delicious by the day! Truly there are no words to describe how delicious this recipe is, and I cannot wait to see your creations! Be sure to come back and let me know what you think! Makes 4 meal salads or 8 servings 1 1/2 lbs brussels sprouts, shaved (approx 6 cups) 1 cup pomegranate arils 1 large red pear, diced 1/2 cup pepitas (pumpkin seeds) 1/2 cup parmigiano reggiano, finely grated 1/2 cup fresh parsley, chopped Dressing: 1/3 cup extra virgin olive oil 1/4 cup lemon juice (2 lemons) 1 large shallot, finely diced 1 tsp kosher salt 1/2 tsp ground black pepper For the dressing, whisk together the olive oil, lemon juice, shallot, salt and pepper. Taste and adjust s&p as needed. For the salad, shave the Brussels sprouts. You can do this in your food processor or using a handheld mandolin. Or, you can buy pre-shredded brussels sprouts. Add the shaved brussels to a large bowl, followed by the pomegranate, diced pear, pepitas, parmigiano reggiano cheese, and parsley. Pour the dressing on top, and toss to coat well. Taste and adjust seasonings. Add extra grated cheese on top and enjoy! The longer this salad sits in the dressing, the softer the Brussels sprouts get and the more delicious this salad is—your leftovers will be amazing!
