Ep 3: STUFFED PEPPERS 🫑🌶️😋 These are SO easy to make and so delicious! These are also so great for meal prep, you can just pop them into the air fryer to reheat them 🙌 Some of my favorite toppings are salsa, sour cream or plain greek yogurt, diced avocado and hot sauce! Ingredients: - 1/2 cup white rice - 1 cup water - 1/2 of a red onion - 5-6 bell peppers - 1/2 tbsp minced garlic - 1 tsp olive oil - 1 lb lean ground beef - 15 oz can diced tomatoes - 1 packet taco seasoning - 1/2 cup shredded cheddar cheese How to make it: - Add rice and water to a saucepan, cover with a lid and bring to a boil. Once boiling turn heat down and simmer until the water is absorbed. - Dice red onion and remove the tops and seeds from the peppers. Dice the leftover pepper around the stems. - Heat 1 tsp olive oil in a large skillet and brown ground beef. - Add diced onion, diced peppers and minced garlic and cook 2-3 mins until softened. - Add diced tomatoes and taco seasoning and stir well. - Add the cooked rice and stir until well combined. - Add the filling to the peppers, then air fry at 375F for 10 mins. SOUTHWEST QUINOA SALAD 🫑🌶️😋 I love prepping a few meals at the beginning of the week to make lunch time super easy! This quinoa salad is one of my favorites because it stores great in the fridge and is packed with veggies and protein! 🙌 This recipe makes 4 servings! (about 490 calories, 40g protein, 54g carbs, 13g fat each) Ingredients: - 1 cup dry quinoa - 2 cups water - 2 chicken breasts (about 8 oz each) - 2 tbsp blackened seasoning - olive oil spray - 1 red bell pepper - 1/2 of a red onion - 1/2 cup loosely packed cilantro leaves - 1 cup corn kernels (can use fresh or frozen) - 15 ounce can black beans Chili lime dressing: - 2 tbsp olive oil - 1/4 cup lime juice - 1 tsp garlic powder - 1 tsp chili powder - 1/2 tsp salt How to: - Add quinoa and water to a saucepan, cover with a lid, and bring to a boil. Once it is boiling, turn heat down to low and simmer until the water is absorbed. Set aside to cool. - Butterfly chicken in half lengthwise, then rub both sides of the chicken breasts with blackened seasoning until it is evenly coated. - Heat a skillet or grill over medium-high heat and spray with olive oil. Cook the chicken for 7-8 minutes each side until cooked through. If you have an air fryer, you can air fry the chicken at 375F for 7 minutes per side. - While the chicken and quinoa is cooking, dice the bell pepper and red onion, and finely dice the cilantro. Drain and rinse the black beans, and thaw the corn kernels in the microwave if you are using frozen corn. - Add cooled quinoa, diced pepper and onion, cilantro, corn and black beans to a large mixing bowl. Whisk together the ingredients for the dressing, then pour over the salad. Toss well until everything is evenly combined. - Slice the chicken, then serve on top of the quinoa salad. BUFFALO CHICKPEA QUINOA SALAD JARS Ingredients: 1 cup quinoa (dry) 1 can chickpeas 1 can black beans 1 can of corn 2 bell peppers, diced 1/2 a red onion, diced 3/4 cup cherry tomatoes, halved For the dressing 1/2 cup nonfat Greek yogurt 1/4 cup buffalo wing sauce 2 tsp lemon juice 1/2 tsp salt 1 tsp garlic powder Water to thin Instructions: 1. Cook quinoa according to package instructions. 2. While quinoa cooks prep your veggies and drain and rinse your beans. 3. Whisk together all dressing ingredients adding warm water 1 tbsp at a time to thin. 4. To 4 large jars evenly distribute all ingredients starting with the dressing and ending with the quinoa. I love this recipe because it works well with whatever veggies you have on hand! I have made this with zuccini, yellow squash, and have even added apples! It is fun to experiment with. Ingredients — 1 tbsp @@primalkitchen greek goddess dressing 1/2 cup of chicken (I did rotisserie) 1/2 cup of quinoa 2 tbsp cucumbers 2 tbsp of red peppers 2 tbso of tomatoes 2 tbsp of red onions 3 tbsp mozerella cheese (I chopped up a cheesestick) 2 tbsp pepperoni Directions — 1. Add your dressing to the bottom of your jar or container. 2. Layer starting with the chicken, then veggies, then quinoa, then cheese and meat. This helps with freshness! 3. I love quinoa 🫶🏼 And if you’ve been following me for a while you’ve probably noticed that I prep a big batch of quinoa each week for my nourish bowls 🥰 Recently, I’ve been craving a little more flavor and love this quinoa salad so much! It’s so easy to make. You really just chop in a few fresh ingredients to your quinoa and season it. It’s so good for lunches, or as a snack and I’ve been bringing it to picnics with friends and everyone has been loving it 🤍 INGREDIENTS ✨4 cups quinoa, cooked ✨1 cup grape tomatoes, halved ✨1 large handful fresh parsley, roughly chopped ✨3 spring onions, thinly sliced ✨1 red bell pepper, diced ✨1/8 tsp garlic powder ✨salt and pepper to taste ✨4 tbsp extra virgin olive oil ✨4 tbsp balsamic vinegar HOW TO MAKE Add your cooked quinoa together with all other ingredients to a bowl and toss until combined. It’s great on its own or as a base in your nourish bowl or as a side dish. I keep it in an airtight container in the fridge for up to 3 days. Here’s how I cook my quinoa: To get 4 cups of cooked quinoa, add 2 cups of uncooked quinoa + 4 cups of water and some salt to a pot, bring to a boil and immediately cover with lid, reduce heat to medium-low and let simmer for 10-15 minutes until cooked. Turn off heat and let sit for another 10 minutes with the lid on. Fluff up with a fork and serve! #quinoa #quinoasalad #quinoarecipes #healthymealideas #healthymealprep
