Vietnamese Ginger Chicken (Gà Kho Gừng) Chicken marinade - 1 whole chicken cut up or 1 kg chicken thighs - 1 tbsp chicken powder - 1 tsp sugar - 1/4 tsp MSG - 1 big piece of ginger - 1 tbsp minced shallot - 1 tbsp minced garlic - 3 tbsp fish sauce - 250ml coconut water Caramel sugar - 1 tbsp vegetable oil - 2 tbsp sugar Garnish - ground black pepper - Red chilli (optional) Instructions 1. Cut up whole chicken or chicken thighs into smaller pieces 2. All chicken into a bowl along with all the marinade ingredients and let it marinate for at least 30 mins. 3. In a pot at oil and sugar on medium heat. Let the sugar melts and caramelizes to an amber colour. 4. Add the chicken and toss in the caramel sauce. 5. Add the coconut water, cover and let it simmer on low for 30 mins. 6. Gingerbread Man Recipe 🤎 Ingredients * 125g unsalted butter, at room temperature * 1/2 cup brown sugar * 1/2 cup golden syrup * 1 egg, separated * 2 1/2 cups plain flour * 1 tbsp ground ginger * 1 tsp mixed spice * 1 tsp bicarbonate soda * 1 cup pure icing sugar * plain flour to dust Method 1. Preheat oven to 180°C 2. Beat the butter and brown sugar with electric beater until creamy. Add egg yolk and golden syrup and combine. 3. Stir in flour, ginger, mixed spice and bicarbonate of soda. 4. Knead dough on a floured surface and cover in plastic and refrigerate for 30mins. 5. Meanwhile place egg white and icing sugar in a bowl and mix. 6. Roll out dough on a floured surface and use gingerbread man cutter and cut out into shapes. 7. Bake in oven for 10 minutes. Vietnamese Broken Rice / Cơm Tấm Sườn Nướng Pork chop - 4 pork chops (with bone) - 1/4 cup fish sauce - 2-3 tbsp oyster sauce - 1 tbsp sugar - 2 tbsp honey - 1 tsp mushroom seasoning (optional) - 3 garlic cloves minced - 2 tbsp minced lemongrass Egg meat loaf - 5 eggs (2 whole, 3 with yolks and whites separated) - 250g pork mince - 30g bean thread noodles - 40g wood ear mushroom - 1 tsp fish sauce - 1 tsp sugar - 1 tsp white pepper - 1 tsp black pepper - 1/4 cup water Pork chops * Pat dry pork chops and tenderise. Cut the sides with scissors to prevent it from curling. * Combine all marinade ingredients in a mixing bowl. Marinade pork chops in fridge for 3 hours or overnight. * Oven: grill at 190°C for 10 mins each side. Spoon leftover marinade half way through. * Airfyer: 180°C for 7 mins each side. Spoon leftover marinade half way through. Egg meat loaf * Combine all the ingredients into a bowl (except for the 3 egg yolks). * Spray loaf pan with oil.
