Ingredients To marinate the chicken 1 lb chicken breast, cut into bite-size pieces 1/2 tsp baking soda Salt to taste 2 tbsp fresh orange juice 1 1/2 tbsp soy sauce 1/2 tsp ground black pepper 1 tbsp cornstarch 1 tsp garlic, minced 1 tsp ginger, minced To make Orange Sauce 1/3 cup fresh orange juice 1 tbsp soy sauce 1/4 cup rice vinegar 1 1/2 tbsp chili garlic sauce (optional) 1/2 tbsp cornstarch 2 tsp orange zest 3 garlic cloves, minced 1 tsp ginger, minced 1/2 tsp red chili flakes 3 tbsp brown sugar Salt to taste 1 tbsp oil 1 tbsp sesame seeds 2 tbsp green onions chopped 1 cup cooked rice, to serve 1/2 cup steamed broccoli, to serve Instructions In a medium-size bowl combine all the ingredients under the “to marinate chicken” section and mix it thoroughly and marinate the chicken for at least 10 minutes. In a separate bowl combine orange juice, soy sauce, vinegar, chili garlic sauce, cornstarch, orange zest, garlic, ginger, red chili flakes, brown sugar, and salt. Whisk it until the sugar dissolves and keep the sauce mixture aside. Heat a wide skillet; add oil and once the oil is heated add the marinated chicken pieces to it. Cook on a medium flame for 4-5 minutes and flip the chicken pieces to the next side and cook for 5-6 more minutes until the chicken is cooked perfectly. Stir in the prepared sauce mixture to the skillet and cook the chicken along with the sauce uncovered for 5 minutes. The sauce will start to thicken and everything comes together. Ingredients For the dough: ¾ cup warm milk 2 ¼ teaspoons quick rise or active yeast 1/4-ounce package yeast ¼ cup granulated sugar ¼ cup butter melted 1 egg 2 ¾ cups all-purpose flour plus more if needed 1/2 teaspoon salt For the filling: 1 cup brown sugar light or dark 2 tablespoons ground cinnamon ½ cup butter softened or almost melted 1 cup heavy cream DO NOT MIX INTO FILLING For the cream cheese frosting: 4 oz cream cheese softened 4 tablespoons butter softened 1 cup powdered sugar 1 teaspoon vanilla extract Instructions To Make Dough: Warm milk in the microwave for 30 seconds, to just about 110F. Transfer warm milk to a large bowl or in the large bowl of a stand mixer fitted with the dough hook. Sprinkle yeast on top. Stir milk and yeast until yeast is mostly dissolved. Add Sugar, butter, egg, flour, and salt. Knead dough on medium speed for 3-4 minutes. The dough might seem wet at first but will become less sticky as you knead it. The dough should be soft, elastic, tacky and smooth. If the dough is still too wet, add another 1-2 tablespoons of flour. Alternatively, this can be done by hand. Grease prepared dough with oil and cover with plastic wrap or kitchen towel. Allow to rise for about 30 minutes or until almost doubled in size. To Make Filling: While the dough is rising, prepare the filling. In a medium bowl, combine the softened butter, brown sugar, and cinnamon (DO NOT add heavy cream). Mix until well combined; set aside. Once the dough has doubled in size, transfer it to a well-floured surface and Roll it into a 9x14-inch rectangle using a rolling pin. Spread filling over dough, leaving about 1/4 inch border all around the outside of the dough. Starting with the 14’’ side, tightly roll into a log and place the seam down to ensure it’s sealed. Cut the dough into 4 equal segments then cut each segment into 3 rolls, about 1 inch each. You should end up with about 12 equal slices. Place the rolls in a buttered or greased 9×13 dish. Cover with a towel to rise for 1 hour. Preheat the oven to 350F. Heat heavy cream in the microwave for 30 seconds until lukewarm. Pour heavy cream evenly over rolls and bake for 25-30 minutes or until the tops are a light golden brown. To make the frosting: While the rolls are cooling, in the bowl of an electric mixer or by hand, combine the cream cheese, butter, powdered sugar, and vanilla extract. Beat until smooth and fluffy. Soft & fluffy honeycomb bread (khalat al Nahal) is a Yemeni bread stuffed with cream cheese and soaked in honey syrup. This delectable bread pairs perfectly with a cup of coffee or karak tea and makes a sweet breakfast or anytime snack! Ingredients 1 cup lukewarm milk 2 Tablespoons sugar 1 ¼ oz packet yeast (about 2 teaspoons) ¼ cup butter melted (or oil) 1 egg separated 3 cups flour plus more if needed ½ teaspoon salt 8 oz cream cheese sliced into 32 pieces Sesame seeds or nigella seeds for garnish Egg wash 1 egg yolk + 1 Tablespoon milk Simple Syrup ¾ cup sugar 1/2 cup water 2 Tablespoons honey Instructions Make the dough: In a large bowl or in a stand mixture with dough attachment, whisk the milk, sugar, yeast, butter, and egg white (set the yolk aside in the fridge it will be used as glaze). Mix in the flour, and salt. Knead by hand or using your stand mixer for 3-5 minutes or until elastic. The dough should feel a little tacky but not sticky. If it is still sticky, add another 1-2 Tablespoons of flour. Cover and set aside to rise for 30 minutes. Divide the dough into 32 mini pieces. They may seem small but they will rise and double in size. Cut the brick of cream cheese into 32 equal pieces. Grease and flour a 9x13 pan, or a 14-16 inch round pan, or 2 small (8-9’’) cake pans and set aside. Spread a dough ball into a round flat circle and add the cream cheese to it. Close the ends, ball it up, and place it into your tray. Repeat with the remaining balls and arrange in the tray. Cover and allow the balls to rise until doubled in size, about 30-45 minutes. Make the egg wash by whisking the egg yolk with 1 tablespoon milk. Brush the top of the dough balls (If you don’t like egg wash you can skip this step or just use milk). Sprinkle a light layer of sesame seeds and/or nigella seeds. Pre heat oven to 375℉ and bake for 20 minutes or until golden. Remove from oven and immediately drizzle with honey mixture. Make Honey Syrup: While the balls are rising, make the Simple syrup/honey mixture. Add the water and sugar to a small sauce-pan and bring to a boil or medium-high heat. Ingredients 1 pound boneless chicken thighs or breasts cut into bite-size pieces ¼ cup yogurt 2 Tablespoons oil of choice 1 Tablespoon lemon juice 3-4 cloves garlic minced 1 teaspoon EACH cumin, coriander powder, salt ½ teaspoon EACH garam masala, fenugreek, curry powder, chili powder, turmeric, black pepper ½ onion sliced or chopped ½ bell pepper sliced or chopped 1 package slider buns pack of 12 1-2 cups shredded mozzarella cheese or cheese of choice Sauce ½ cup mayonnaise 1 Tablespoon ketchup 1 Tablespoon hot sauce, sriracha, or red chili sauce 1 teaspoon Dijon mustard For herb butter 4 tbsp butter melted 4 cloves garlic minced 2 tbsp cilantro or parsley minced Instructions Marinate: In a medium bowl, combine the chicken pieces, yogurt, oil, lemon, garlic and spices. Mix to combine and cover. Marinate in the fridge for 30 minutes or up to 48 hours. Cook: Heat a heavy-duty pan over medium-high heat. Add marinated chicken mixture, onion, and bell pepper. Cook on high heat for 8-10 minutes or until cooked through. Make the sauce and herb butter: In a small bowl whisk all the ingredients for the sauce. In another bowl, whisk the ingredients for the herb butter. Preheat the oven to 375ºF. Line a 9×13-inch baking dish with foil and coat lightly with nonstick spray, oil, or butter. Assemble: Slice the slider rolls in half, and place the bottoms evenly into the prepared pan. Spread the sauce evenly onto both sides of the rolls (from the inside). Top with the chicken mixture and sprinkle with a generous layer of cheese. Place the slider roll tops on top, and press down slightly. Brush the top with the butter mixture. Bake for 15 minutes, or until cheese is melted. Cover with foil until ready to serve.
