Let’s start a fun pumpkin series 🎃 Super easy pumpkin bread, perfect for this chilly October 🍞Ingredients below 👇 300g pumpkin (I used delica, you’ll need about half of one) 600g (5 cups) bread flour 1 sachet dried instant yeast 12g (2 tsp) salt 200ml (3/4 cup) water 1 tbsp honey 3 tbsp olive oil Method: 1. Cut the pumpkin, remove the skin and seeds and bake in foil at 180C (350F) until tender, around 30-40min. Let it cool, then blend until smooth. 2. Add the flour and yeast to a stand mixer bowl and mix together, then add water, oil, honey and the pumpkin purée. Knead until smooth and elastic, then add the salt and knead for a further 2 minutes, until fully incorporated. Cover and let rise until doubled, around 2 hours. 3. Knock down the dough, shape into a ball and use kitchen twine to create 8 equal segments. Let rise for another hour. 4. If using a Dutch oven like here, place it in a preheated oven at 220C (425F) for 10-15min, then place the bread in and close the lid. Bake for 20min, remove the lid and bake for a further 15-20min. If it starts getting too dark lower the oven temperature slightly (it will be naturally darker than other breads due to the natural sugars in the pumpkin). 5. Let’s make a delicious Italian meatloaf with my beautiful mamma 🥰 🍅 ingredients below 👇 600g (2 + 1/2 cup) mince beef 100g (1/2 cup) chopped mortadella 50g (1/2 cup) grated Parmesan 50g (1/4 cup) chunks stale bread Milk 2 eggs 125ml (1/2 cup) white wine 25g dried mushrooms 500g (2 cups) chopped canned tomatoes 1 stick of celery 1 clove of garlic Handful of basil and parsley Olive oil Flour 1/2 tsp nutmeg Salt and pepper Method: 1. Soak the bread in some milk and set aside. Soak the mushrooms in warm water and set aside. 2. Mix the mince, chopped mortadella, the squeezed soaked bread, eggs, nutmeg, parmesan and season with salt and pepper. Shape into a meatloaf and cover the outside in some flour (this will create a nice crust and help thicken the sauce). 3. Finely chop the celery, garlic, basil and parsley and set aside. Drain the mushrooms, chop and set aside (keep the water!). 4. Pan fry the meatloaf in some olive oil until all sides are golden brown. Add the vegetable mixture and cook for 5min, then add the wine and let it evaporate almost completely for about 5min. 5. Add the mushroom water, the chopped canned tomatoes and chopped mushrooms. Season, mix, cover with a lid and cook for 1h-1.15h on low, turning around halfway. If it dries too much you can add a bit of warm water. Occhi di bue literally translates to “ox eyes” and they’re a characteristic Italian sandwich cookie, filled with anything you like. They’re super easy to make and I guarantee you’ll love them! Ingredients below 👇 225g (1 + 3/4 cup) flour 125g (1 cup) icing/powdered sugar 125g (1 stick) softened butter Pinch of salt 2 egg yolks 1 tsp vanilla extract Pistachio spread (or other filling of your choice) Method: 1. Mix the flour, sugar and salt together, then add the egg yolks, vanilla and butter. Mix until a dough forms, then refrigerate for 30min. 2. Roll out the dough on a flowered surface until about 4mm thick, then use a cookie cutter or cup/glass to cut out circular cookies. Use a smaller cookie cutter (or a piping tip, like I did in the video) to cut out smaller circles in the middle of half the cookies. 3. Bake at 170C (340F) for 15min, or until lightly golden. Sprinkle icing sugar only on the cookies with the smaller circle in the middle. 4. Super easy NO KNEAD focaccia 🍕 If you work a 9-5 like I do, you can even mix everything together before leaving in the morning and bake in the evening 🥖❤️ ingredients below 👇 500g (4 cups) bread flour 460ml (2 cups) water 12g (2 tsp salt) 1 sachet instant dry yeast (c. 7g or 2 tsp) Olive oil Flaky salt, for the top Method: 1. Mix the flour, water, salt and yeast until combined, cover and let rise for 2-3h or until more than doubled (if preparing this in the morning for later, you can put it in the fridge and take out once ready to bake) 2. Spread the dough onto an oiled baking tray, cover and let rise for a further 30min 3. Drizzle with more olive oil, use your fingers to create dimples, add rosemary and/or any other toppings you like, and sprinkle with flaky sea salt 4. Ingredients below 👇 Pistachio is one of the most quintessentially Italian ingredients out there, so let’s start this new series where we explore all the wonderful dishes we can make with it ❤️ 100g (3/4 cup) shelled pistachios 2 tsp vegetable oil 2 tsp honey 4 eggs, separated 100g (1/2 cup) sugar 450g (2 + 3/4 cup) mascarpone Freshly brewed coffee Savoiardi biscuits (ladyfingers) 1. Blend the pistachios, honey and oil until you have a smooth paste. 2. Whisk the egg whites until you have stiff peaks, then whisk the yolks and sugar until light and creamy. Whisk in the mascarpone and pistachio paste, then fold in the egg whites. 3. Briefly dip the savoiardi (no more than 2 seconds!) in the cooled coffee. 4.
