Hit the spot!!! 🤤 link to my U-tube is in the bi🥰 Recipe (machekel) 1 whole chicken (2lbs) Vegetable oil 1 onion 1 eggplant 2 potato (I used 1 large and 1 small) About 10 garlic 1 cup tomato sauce 2 cloves and cardamom 1/4 spoon curry (Jamaican curry) 1/4 spoon turmeric 1/2 spoon fresh cumin 1/2 seven spice 1 1/2 salt or salt to taste sprinkle black pepper Brown butter/clarified butter Ground Saffron (optional) 1-in a low temperature sauté onions until golden then add the garlic and this is when you want to add the clove and cardamom. After a minute add the tomatoes sauce and sauté for a few minutes until color gets richer. Add the chicken. Mix for a minute then cover and let it simmer on the lowest temp for 30-45 minutes. 2- cut the veggies long, thick slices and lay them on the baking pan. Sprinkle salt on top. Then pour the chicken along with the sauce on top of the veggies. I sprinkled ground saffron on the chicken. Then I added about 1-2 tablespoons of brown butter for added flavor. Bake at 450 for another 30- 45 min or until tender. Enjoy! #ramdan #
