Easter Lamb (serves 4) Leg of lamb approx. 2kg in weight Marinade: 1 bulb of garlic Small bunch fresh rosemary 5 anchovy fillets 30ml olive oil Mint Sauce: 1 small red onion 1 clove garlic minced Bunch fresh mint chopped Handful fresh parsley chopped 50ml red wine vinegar 20ml olive oil 1 tsp. sugar Salt to taste Method: 1: Finely chop all of the marinade ingredients until fine then pop into a bowl, add the olive oil and a pinch of salt, stir well to combine. 2: Using a small sharp knife poke lots of holes into the lamb, rub the marinade into these holes and all over the lamb, place into a baking tray and sitting on top of a trivet of vegetables. season with salt and pepper, then place into a preheated oven set at 230c for 20 minutes then lower the temperature to 180c and roast for a further hour for slightly pink meat, remove from the oven and rest under foil for 20-30 minutes. 3: To make the mint sauce, combine the onion, garlic, herbs, vinegar, oil and sugar in a small bowl, season with salt and leave to stand for at least 30 minutes before serving. #easterlamb #easter #roastlamb #ukfood #foodietiktok #roastdinner

This sauce is the nuts with roasters. Zhoug Smashed Potatoes (serves 4) Smashed Potatoes: 600g maris piper potatoes peeled and quartered ½ tsp. dried chilli flakes 1 tsp. ground cumin 1 tsp. turmeric 1 tsp. onion granules 1 tsp. garlic granules 1 tsp. salt 1 tsp. mustard seeds Zhoug Dressing: 1 bunch of fresh coriander 1 small bunch of fresh parsley 1 large clove of garlic minced 1 red chilli deseeded and finely diced 1 tsp. freshly ground coriander 1 tsp. freshly ground cumin ½ tsp. red chilli flakes 1 tsp. sugar ½ tsp. salt Juice 1 lemon to taste Extra virgin Olive oil to loosen Method: 1: Par boil the potatoes for eight minutes, then drain and leave to steam for five minutes. Pop the potatoes into a bowl, then sprinkle in the spices, Mix well then add into a baking tray along with some hot oil. Pop into an oven pre-heated to 200c / 180c fan, scatter the potatoes into the tray, then turn to coat generously in the oil. Cook in the oven for 30 minutes turning occasionally, crush with a glass then return to the oven for another 30 minutes, until crisp. 2: To make the dressing, finely chop or blitz up all of the Zhoug sauce ingredients together then set aside until needed. #smashedpotatoes #potato #potatotiktok #zhoug #recipesoftiktok

Welcome to my Fakeaway series, please be kind in the comments as I know this is not authentic Italian. But trust me it’s delicious. Fakeaway Spaghetti Carbonara (serves 2) 180g spaghetti 100g smoked bacon lardons 1 large clove of garlic peeled and crushed 1 tbsp. olive oil 70g parmesan cheese grated 2 egg yolks Extra parmesan cheese for serving Method: 1: Cook the pasta to the packets instructions then drain. Make sure to reserve the pasta cooking liquid as you will need this. 2: Gently crush the garlic clove down with the back of a knife but keeping it whole, then pop the bacon, garlic and oil into a pan and cook for 5 minutes until golden. Remove the garlic clove then add the drained pasta into the pan and toss. 3: Whisk together the cheese, egg yolks and black pepper then add 6 tablespoons of the pasta cooking liquid, stir to make a paste. Add this to the pasta, then stir well, adding more of the starchy pasta water until the spaghetti has a lovely covering of the cheesy sauce.
