I made this soup for my friend’s mother who hasn’t been feeling well. That’s why it’s called “loving butternut squash” 💚 1 Butternut Squash (about 9 cups chopped) 1 White Onion, diced 2 Shallots, diced 2 Red Apples, peeled, cored and chopped 2 TBSP Avocado Oil 1 TBSP Onion Powder 1 TBSP Sage 1 TBSP Thyme 1 tsp Sea Salt, adjust to taste 1/8 tsp Cayenne Pepper 4 cups Spring Water or Veggie Broth Preheat a soup pot over medium high heat, once hot reduce heat to medium and add oil, shallots and onions. Cook until fragrent or until the onions are semi-translucent then add the apples and butternut squash. Sauté for a couple minutes before stirring in the seasonings. Cook for an additional minute before adding in the spring water. Bring soup to a boil, then reduce to a simmer for 20 minutes.
