Welcome back to my rice cooker series : ) This is what I generally used to make my curry udon, but feel free to adjust the amount of stock, seasoning, and roux to your preference. 1.5c dashi stock 2tsp soy sauce 1/2 tbsp mirin 1tsp sesame oil 1 curry roux cube 1 serving udon noodles 1. Bring dashi, soy sauce, mirin, and sesame oil to a simmer 2. Dissolve curry roux. Tip from my friend Shuzo! Cut the cubes into smaller pieces and use a strainer to make it easier to dissolve the roux. 3. Add your proteins and vegetables of choice. I used chickpeas and oyster mushrooms.
