Follow for more! Radish Water Kimchi AKA Dongchimi can be a refreshing side dish, a cold appetizer soup, or you can make delicious cold noodles with it. Enjoy! Ingredients: Korean radish 3.5 lbs. Kosher or sea salt 4 Tbsps Sugar 4 Tbsps The brine: 1.5 cup or 1 medium Korean pear or Asian pear 1 sweet apple (preferably honey crisp or Fuji) 1 cup onion 4 Tbsps garlic 2 Tbsps ginger 1 cup water 1 Tbsp kosher or sea salt 8 cups water Green onions 4 Chili pepper 2 Steps: Wash, peel and cut radish into 2 inch slices. Mix in salt and sugar and let sit for 30 minutes. Rinse with cold water and drain. For the brine, blend Korean pear, apple, onion, garlic, ginger & 1 cup of water. Strain using a cheese cloth. Add salt and water. Mix well. In a clean container, add radish, green onions, and chili pepper. Pour in the brine. Close the lid. Let sit in room temperature for 1-3 days then store in the fridge.
