I put the yolks, lemon juice and mustard in the blender for 2 minutes on low speed. Then slowly add in warm butter (I microwave till hot) from the top of the blender. Salt to taste once formed. Poaching an egg. Boil water with some vinegar and salt. Swirl the water, I pre crack the egg then drop in the swirl. Boil for 3 minutes then remove with slotted spoon. Toast English muffin, top with a poached egg, hollandaise and fresh green onions or chives. The USDA recommends cooking eggs until the yolk and whites are firm.
