Fillo Quiche Cups 📕Recipe here: ❂ Ingredients: Makes 12 servings Fillo Dough Shells: 250g. Fillo pastry sheets 50g. butter, melted Filling: 200g. Pancetta or bacon, diced 10 Large eggs 50g. Fresh chives, chopped Salt/Pepper to taste 150g. Swiss&Gruyere cheese 150g. Fresh Mozzarella cheese, sliced Seasame seeds ❂ Cooking process: ⁃ Preheat oven to 375F and grease 12 muffin cups with butter. Set aside until ready to use. ⁃ Fry pancetta or bacon over medium-high heat until crisp. Transfer to a bowl and let cool slightly. ⁃ In a medium bowl whisk the egg add Swiss&Gruyere cheese, chives and fried pancetta. Salt/Pepper. Set aside until you prepare the filo shells. ⁃ Cut the fillo pastry sheets into into 5×5 inch squares. ⁃ Brush the filo pastries with melted butter. ⁃ Take 3 fillo squares, place one on top of the other to form a star and line the muffin cup. Repeat for all 12 muffin cups. ⁃ Divide egg mixture evenly into pastry shells. ⁃ Crease one of remaining filo square and place on top.Brush with more butter.
