Hi friends! ✨ Peruvian food was on the menu for my clients on this evening. 😍 🇵🇪 To start I made Peruvian style ceviche con leche de Tigre (tigers milk). I served that with some boiled sweet potatoes, butter lettuce & grilled corn. ✨😍 For the main dish I served some roasted bone in chicken thighs that I marinated in a mixture of garlic, cumin, paprika, oregano, lime juice, aji amarillo, avocado oil, sea salt and black pepper. I served the chicken with crispy smashed potatoes, an avocado salad and of course Aji verde sauce for the chicken. Hi friends! ✨ Here’s what I made for clients on this day for lunch & prep. Post game dinner for my clients. Appetizer was a spinach, roasted chickpea, red onion, avocado & toasted almond salad with a citrus champagne vinaigrette. ✨ The entree was a pan seared halibut over freeing pesto & a bad of seared shallots, topped off with a butter, garlic, white wine & lemon reduction.
