Mochi Week Episode 5: Praline Mochi I'm using the mochi we made in episode 1! Ingredients for the mochi are down below, but if you need the steps, go check out episode 1! INGREDIENTS: MOCHI- 100g Glutinous Rice Flour 60g White Sugar 160ml Water Cornstarch for dusting Filling- 100g of nuts (I’m using pistachio and walnut) 70g granulated sugar (If ur blender is bigger, you may need to double the recipe to get it to a paste like consistency) Steps: 1. Roast the nuts in the oven for 6-8min at 180*c. It should be noticeably more fragrant. Let it cool completely before moving on 2. In a saucepan add the sugar and let it dissolve at medium heat. Try to not stir or agitate it until most of the sugar has dissolved. Stir with a spatula when needed to get it evenly golden. 3. Once the caramel is golden brown add in the cooled nuts. Quickly stir everything together as best as you can 4. Pour it onto a baking sheet to cool completely 5. With half or 2/3 of the praline, add it to a blender and blend until u get a paste or praline butter 6. The other half needs to be crushed into smaller chunks 7. To assemble, take the scoop of the paste. Add the chunks to the middle and roll it into a ball 8. Add the ball to a piece of mochi and wrap it up by pinching the edges together 9.
