Recipe 👇🏾Welcome to the rice series! This has been a long time in the making! I’m starting off with my favorite rice of all time ❤️🇵🇷 Arroz con gandules! Ingredients: - 3 cups of long grain rice, rinsed - 1 can of gandules beans (with liquid) 15oz can - 2 cups of chicken broth (or enough to cover the rice,) - 2 tablespoons of oil - 2 tablespoons of sofrito - 1 small can of tomato sauce 8oz - 2 packets of sazon seasoning - 6 oz of meat (optional) - Adobo, garlic powder, pepper, and salt (to taste) - Bay leaf and cilantro (for garnish) Instructions: 1. Rinse the rice. 2. In a pot, sear any meat of choice in your oil. 3. Add sofrito and tomato sauce, and simmer on medium heat 4. Add seasonings and gandules beans with the liquid, and simmer. 5. Add rinsed rice and coat it with the sauce base. 6. Slowly add chicken broth, enough to cover the rice. 7. The liquid should reach the first line of your finger when you touch the top of the rice in the pot. 8. Stir one last time and add bay leaf and cilantro. Let most of the liquid cook out on low heat 9. Cover with a lid (you can add a banana leaf on top, but it’s optional). 10. Cook on low heat for 25-30 minutes. Do not lift the cover. 11.
