Creamy Fajita Chicken Pasta - 43g protein per serveeee baby ✨🤌🏻 Recipe slightly adapted from both @Scarlactive & @Aussie Fitness 🇦🇺💪🏼 (they are both GENIUSES for coming up with this!!!!) Recipe: 240g protein pasta (dry weight)- I use penne 1/2 tbsp olive oil 400g raw chicken breast (cut into cubes and seasoned with some salt & pepper) 2-3x medium capsicum (bell peppers) - sliced thinly 1 red onion - sliced thinly 1 packet fajita seasoning 8 x light laughing cow triangles or 130g light cream cheese or light cooking cream cheese 1. Cook the pasta according to packet instructions and reserve about 1/2 cup of pasta water 2. Heat the oil over medium-high heat and cook the chicken for 4-5 minutes or until no longer pink and move to 1 side of the pan 3. Add the thinly sliced veggies and cook for another 3-5 minutes or until the veggies are slightly soft. Add the packet of fajita seasoning and mix well 4. Turn to low heat and ,ake a hole in the centre and add your cream cheese/laughing cow wedges and pasta water. Mix until well incorportated and creamy. 5. Add the pasta and mix well until heated through and enjoy Makes 4 serves and is PERFECT for meal prep!!
