I seriously love making Eggs Benedict at home. It’s not as intimidating as it seems and you can make as much of it as you want! I’ve always said if I were to open a restaurant, it would be a 24 hour brunch spot and everything would be Eggs Benedict-inspired 🙃 This method for Eggs Benedict only takes me about 15 minutes and comes together so quick. I made enough for 2 using: •6 whole eggs (you can do 4, we just love eggs over here 🙃) •3 egg yolks •1 stick (or 1 cup) of butter •~1tsp of lemon juice •Salt, pepper & cayenne pepper •2 slices of crusty bread •As much ham & prosciutto as you want •Chives To poach your eggs, you can totally add a touch of vinegar to your water. I didn’t have any but I find that it doesn’t make much of a difference for me personally so I’m okay without it. You want your water to have just a few bubbles at the bottom, not simmering or boiling. Slowly drop them into the middle of a little vortex for 2-4 minutes or until the whites are set & the yolk is cooked to your liking. My hollandaise is pretty straight forward and comes together just as easily with a standard blender, you don’t need any fancy equipment for easy hollandaise!
