SHEET PAN CASHEW CHICKEN OVER COCONUT RICE 🥥 Each week I am going to share a new easy weekly dinner idea!! This week's is Sheet Pan Cashew Chicken with Coconut Rice. It’s so easy and everyone around the table will actually eat it… and probably ask for seconds. INGREDIENTS: Rice: 1(14-ounce) can full-fat coconut milk plus one can of water 2 tablespoons liquid coconut oil or neutral oil such as avocado 2 cups long-grain white rice Glaze: 1/2 cup soy sauce 1/2 cup chicken broth 4 1/2 tosp honey 1 tbsp cornstarch 2 tosp rice wine vinegar 2 tbsp toasted sesame oil 3 garlic cloves minced 1 tbsp freshly grated ginger ¼ tsp red pepper flakes (optional/ or to taste) Veggies: 1 red bell pepper diced into 1" chunks 1 orange or yellow bell pepper diced into 1" chunks 1 red onion diced into 1" chunks 2 cups broccoli florets Cashew chicken: 2 boneless, skinless chicken breasts cut into 1" chunks 1 cup salted roasted cashews Green onions for garnish (optional) Toasted sesame seeds for garnish (optional) INSTRUCTIONS: Arrange a rack in the upper third of the oven and heat to 425°F. Grease a sheet pan with 2 tablespoons coconut oil, then add the rice and shake into an even layer. Pour over the coconut milk, then fill up the can with water and pour over the rice. Seal tightly with foil and bake until the rice is just tender, about 30 minutes. To make the sauce: In a small bowl combine soy sauce, chicken broth, honey, vinegar, sesame oil, garlic, ginger, red pepper flakes, and cornstarch. Place the chicken in a bowl and cover with 1/2 of the sauce. Place the vegetables on a parchment lined baking sheet and cover them with the other half of the sauce. Toss well. Roast in the oven for 10 minutes. After 10 minutes, push all the vegetables to one side. Place the chicken pieces and the marinade on the baking sheet. Add the cashews. Roast for about 12-15 minutes or until the chicken is cooked through. Serve over rice and sprinkle with sesame seeds and green onions #weeknightdinner #recipesforyou #easyrecipe

This is a wonderful way to teach kids about the eclipse In honor of the Total Solar Eclipse, I am making Total Solar Eclipse Pies - with the sun on one side and the moon on the other. Are you going to watch (with glasses of course!) the Total Solar Eclipse? 🌜INGREDIENTS: 12 store bought sugar cookies (I used Tate's Lemon Cookies) ½ cup marshmallow fluff 8 oz chocolate chips 2 tosp avocado oil (or other neutral oil) 🌜INSTRUCTIONS: Combine chocolate and oil and microwave in :30 intervals until the chocolate is melted and smooth. Place about 1 tbsp of marshmallow fluff onto 6 cookies. Top marshmallow fluff with another cookie. Carefully dip half of the cookie sandwich (pie) into the melted chocolate and allow excess chocolate to drip off. Place on a baking rack to dry. Allow chocolate to set. To speed up setting process, you can refrigerate the cookies until chocolate is set. #eclipse2024 #moonpie #sweettreats

🏀FINAL FOUR MEATBALL PULL APART BREAD SLIDERS🏀 It is Final Four time! And the boys AND the girls are playing… for UCONN! Are you watching the games? You have to make my Meatball Pull Apart Bread - whether you are watching the game or not. I have a Granddaughter at UCONN (and my Grandson will be going this Fall) so…I’ll rooting for the Huskies!!!! 🏀INGREDIENTS: 1 lbs 80/20 ground beef ½ lb sweet italian sausage ¼ cup breadcrumbs 2 tbsp grated parmesan cheese 1 tbsp steak seasoning ½ tsp crushed red pepper ¼ cup whole milk 1 large eggs 4 ounces unsalted butter 1 tbsp garlic powder 2 tsp grated parmesan cheese 1 tsp dried parsley ½ tsp salt ½ tsp pepper 2 12-count packages Hawaiian sweet rolls or 1 24-count package 1 lb grated mozzarella cheese (you may not use it all) 1 ½ cups marinara sauce Fresh parsley for garnish (optional) 🏀INSTRUCTIONS: Preheat oven to 425°. In a large bowl, combine the beef, sausage, bread crumbs, cheese, steak rub, and pepper flakes. Add the milk and eggs and mix gently with your hands until well combined. Roll the ground beef mixture into 24 balls, each about 1 inch and weighing about 1 ounce. Place the meatballs on one rimmed baking sheet with room between each. Bake meatballs for 15 minutes until golden brown. 🧈To make garlic butter. In a small bowl, combine the melted butter, granulated garlic, Parmesan, parsley, salt, and pepper. Place Hawaiin rolls onto a baking sheet. Using a serrated knife, cut small squares on the top of each Hawaiian roll and lightly hollow out the bread filling. Brush the rolls inside and out with garlic butter. Sprinkle half the mozzarella in each roll hole. Top the cheese with a meatball. Pour about ½ tbsp of sauce over each meatball. Top with the remaining cheese. Lightly spray a sheet of aluminum foil with cooking spray. Cover the entire baking sheet with the foil sheet. Return sliders to the oven until the cheese is melted and the rolls are toasted, about 15-20 minutes. Carefully take the foil off of the sliders and place under the broiler for about 5-7 minutes until the cheese is melted and bubbly and enjoy! #uconn #basketball #finalfour #gamedayfood
