Gotcha Pork Roast Yield: 4 to 6 servings Ingredients: - 3 lb gold potato, washed - 3 TBSP unsalted butter - 1 small onion, finely chopped - 10 oz king trumpet mushrooms, finely chopped - 1 1/2 tsp salt, divided (or as needed) - 17 strips of Wright Brand Thick-Cut Hickory Smoked Bacon - 2-3 sprigs rosemary, cut into smaller pieces - Watercress (optional for garnish) - 2 cups red wine - 1/2 cup sweet sake - 1 TBSP soy sauce - 1 tsp of sugar (if needed) - 2 TBSP cold unsalted butter, cut into small pieces 1. Cut the potatoes into halves or quarters and steam the potatoes for about 20-30 minutes, until fork tender. 2. In a pan over medium heat, add butter. Once melted, add the onion, king trumpet mushrooms, and 1/2 tsp of salt. Sauté until everything is cooked down and browned. Set aside. 3. When the potatoes are cooked, let them cool until comfortable to handle. Peel then mash the potatoes in a mixing bowl. Add the sautéed onion and mushroom along with 1 tsp of salt. Mix until the starch in the potato becomes stretchy. 4. Transfer the potato mixture onto cling film and shape into a 9 inch log. Let it cool in the fridge until needed. 5. On a cutting board, shingle 12 strips of Wright Brand Thick-Cut Hickory Smoked Bacon vertically. Then, shingle 5 strips horizontally at the center. 6. Place the log of potato at the center of the bacon. Wrap the bacon around the potato log, then carefully flip it so it’s seam side down. Truss the roast and wedge in small sprigs of rosemary. 7. Place the roast onto a roasting rack with a sheet pan underneath. Roast at 400°F for about 30-40 minutes, until the bacon is cooked and golden. Remove from oven and garnish with watercress. 8. For the sauce, combine red wine, sweet sake, soy sauce, and sugar. Bring to a high simmer and reduce it 3/4 of the way. Remove from heat and add in cold butter.
