I finally got my hands on more huitlacoche!! Where I am from it is called corn smut, and it’s normally thrown out . This is my third time getting to cook with fresh huitlacoche thanks to my friend @elcaprichomex7 ❤️ Huitlacoche is the fungus that grows on corn. It is considered a delicacy in Mexico- some even call it the Mexican truffle. Though it doesn’t look or taste like truffles. The flavor to me is sweet and almost has a fermented flavor. Like a sweet balsamic glaze. Last time I made huitlacoche everyone told me to make a quesadilla with it but today I was really in the mood for cheesy empanadas! I love fried empanadas the most and the dough I got was dyed with natural anatto seeds for extra color. I pan fried the huitlacoche with salted butter, shallots, and garlic. Then I mixed it with chihuahua cheese, onions, and cilantro then refridgerated the filling before adding it to the empanada dough. I kept the shape simple and used the end of a fork to close the edges. The final result was an epic cheese pull mixed with that delicious huitlacoche filling! I had a little bit of crèma with these and a sprinkle of onions and cilantro but they were delicious on their own too! #huitlacoche #empanadas #cheesepull
