Fetri toto with smoked mackerel and calms served with banku. Fetri means okro, To means pound, To To means pounding so Fetri toto simply means pounded Okro. (I know you love pounding but no,not that pounding toto you know…ashewo) The beautiful ewe tribe in Ghana without a doubt have some of the delicious meals and this is one of them. (Togo, Benin,Nigeria…badagry to be precise do you know this food and what do you call it) This version of okro dip || soup taste very fresh and quick to make. Just like we have oil free okro soup this can be made the same too. Any protein can be used but less is more and most importantly it stay true to it authenticity. 12 Okro fingers 1 tomato || optional 2 shallots || sliced 1 shallots || diced 1 clove garlic Small ginger Kpakpo shito || pepper of choice Fermented fish || slightly roast Smoked mackerel Fresh clams Palm oil Salt tt 1- In a saucepan with water add okro,tomato and bring to boil for 6 minutes. 2- In an earthenware bowl add kpakpo shito,ginger, garlic,diced onion,roasted fermented fish,salt and grind till almost smooth. 3- Add the cooked tomato and okro, mash in the tomato till smooth then lightly pound the Okro and mix together. 4- In a saucepan add palm oil,sliced shallots,fermented fish,calms and fry for 3 minutes then add the smoked mackerel and fry for 2 minutes. (You can season with salt) 5- Pour the palm oil over the Okro and stir to combine then add the seafood. 6- Serve with your banku or swallow of choice. Enjoy! To make banku 1 1/2 cups cassava dough 1 cup corn dough 3 cups water plus more for steaming Salt tt You can make dough 50/50 if you want, I like soft banku for okro so 70/30, 60/40 ratio. Combine corn & cassava dough in a saucepan with added water (consistency depends on you) turn until solidified then add water and steam on low for 12 minutes.
