I used greens from my garden to make this dish, I used khodur fata/khodur aga AKA bottle gourd leaves/stems which are already very popular amongst Bengalis for this dish, I also used courgette leaves - surprisingly they're EDIBLE and taste really good when mixed with other greens. I also used lambs quarters AKA batwa haag (Bengali) - a lot of people don't eat this green as they consider it a weed but it's similar to spinach and extremely good for you. 🙌🏽 If you don't have any of these leaves you can always use spinach and mix it with other greens like mustard greens. Mums, aunties and grandmas will love this recipe, so make it for someone special in your life and surprise them! 🥰❤️ Af MIXED HAAG/SAAG You will need: • small bunch of lambs quarters/batwa haag • 7 - 8 bottle gourd leaves • 3 - 4 bottle gourd stems • 3 - 4 tender courgette leaves • 7 Bangladeshi onions • 2 white onions • oil • 5 - 6 dried chillies • 8 - 9 cloves of garlic, grated • 1.5 - 2 tsp salt (adjust to taste) • 1 tsp ghee Method: 1. Prep stems/leaves by removing the stringy fibrous parts - it's easy to do this using a knife or daa, cut into the stem but don't cut all the way through and then pull to remove the string easily. Do this for both the khodur fata (bottle gourd leaves), khodur aga (bottle gourd stems) and the courgette leaves. Remove any brown leaves from the batwa haag and wash ALL leaves 2 - 3 times in cold water and drain. 2. Finely slice the leaves using a knife or daa, the finer the greens are, the better they cook down. 3. Heat oil in a pan (add enough to cover the base of the pan), add the dried chillies, wait till they turn dark brown then add garlic. 4. Once garlic is golden brown, add the onions + salt, cook for 2 - 3 minutes then add the chopped leaves. Mix well, cook covered until the leaves wilt and change in colour from bright to dark green, stir occasionally and cook out all the moisture.
