Chopped Brisket Burgers 🍔 Low and slow Harvey Beef brisket given the full smoke treatment before being chopped and served hot in soft white buns. Super simple but utterly drool-worthy. Recipe below ⬇️ - Trim any excess hard fat off the top and bottom of the beef brisket while leaving a light layer of fat on the flat. - Apply a light layer of hot sauce to both sides then hit it heavy with your favourite bbq beef rub. - Place in the smoker or bbq set to roughly 125C for roughly 4 hours. - Once the bark has set remove from the smoker and wrap tightly in 2 layers of foil. - Place back in the smoker and cook for a further 3-4 hours. - Once the brisket has hit an internal temp of roughly 93C and is probe tender on both sides remove. - Rest on the bench for 30-45 mins. - Unwrap the brisket and reserve all of the liquid pouring into a foil tray. - Slice the brisket into small chunks. - Place the chopped brisket back into the smoking liquid and mix. - Fill the white bread rolls with pickles, another shake of hot sauce and plenty of the juicy brisket chunks. - Serve straight away and enjoy 🤗 This was a smaller brisket making the cook time shorter. Steak Quesadillas 🥩🌮 This recipe using Harvey Beef porterhouse is quick, simple and perfect for the whole family. Tender, marinated steak topped with grilled vegetables and melted cheese 🤤 Written recipe below; - Slice 1 red capsicum, 1 green capsicum, 1 red onion and 3 cloves garlic. - Add olive oil to a cast iron pan set over high heat. - Add the vegetables to the pan and sauté for 5-10 minutes until softened. - Remove and set aside in a bowl. - Slice 3 Harvey Beef porterhouse steaks in to thin strips. - Transfer to a separate mixing bowl. - Add 50mL olive oil, 1/2 tbsp salt, 1 tsp cracked pepper, 1/2 tbsp garlic powder, 1/2 tbsp onion powder, 1/2 tbsp oregano and 1 tbsp smoked paprika. - Mix well, cover, and set aside in the fridge for 30 minutes to marinate. - Add olive oil to a pan then add the marinated beef strips. - Grill for roughly 8-10 minutes until caramelised. - Squeeze the juice of a lime over the top of the meat and cook for a further 1-2 minutes until caramelised. - Remove and set aside in a bowl. - Place the tortilla on the same hot plate and grill for 1 minute. - Add grated cheese, grilled vegetables, cooked beef strips and a squeeze of lime. - After a further 1-2 minutes fold in half and close the quesadillas. - Repeat this process until all the quesadillas are cooked and serve straight away 🤗 #cheatmeats #harveybeef #australianbeef #beef #aussiebeef #quesadilla #quesadillas #tacos #bbq #meat #steak #steakrecipes #beeflover #fajitas #barbecue #steaklovers #perthfood #pertheats

Smoked Guinness Pulled Beef Burgers ☘️ Slow cooking allows the connective tissue in this Harvey Beef chuck roll to break down, resulting in succulent, melt-in-your-mouth texture and a rich beefy flavour. Check out our full written recipe below; - Lightly trim any excess silver skin and fat from the beef chuck roll. - Apply a generous layer of salt, cracked pepper and garlic powder to all sides. - Place in the smoker or oven preheated to 130C for roughly 4 hours. - Once the bark has set transfer to a large foil tray. - Pour 2 cans of Guiness beer over the beef and wrap tightly with foil. - Place back in the smoker and continue cooking for a further 4.5-5 hours. - Once the meat is probe tender and has hit an internal temp of 95C remove. - Allow to rest in an esky or wrap tightly in a towel for 1 hour. - Meanwhile prepare the Guiness BBQ Sauce in a small pot. - Set the pot to a simmer and add 1 can of Guinness, 1 cup barbecue sauce, 1/2 cup brown sugar and 1 tbsp honey. - Keep mixing and allow to simmer and reduce for 15 minutes. - Once the sauce has thickened remove and allow to cool. - Remove the foil from the Chuck roll and pull in to thick chunks. Crispy Pork Belly Strips 🤩 Roasting your pork belly in strips allows for maximum flavour in every bite and also maximum crunch! @Murray River Salt as always for the ultimate pork crackle 👌 Written recipe below; - Slice roughly 1kg of pork belly in to 3 equal strips. - Score the rind with a sharp knife then apply Murray River Salt to draw out excess moisture. - Place in the top of the fridge uncovered overnight to dry out. - When you are ready to cook pat the pork rind dry with paper towels. - In a small bowl combine, 1 tsp anise, 1/2 tbsp smoked paprika, 1/2 tbsp fennel seeds, 1/2 tbsp Murray River Salt and 1/2 cup olive oil. - Mix well and set aside. - Flip the pork belly meat side up in a roasting dish. - Spoon the wet marinade over the meat and massage in to all sides avoiding the rind. - Flip skin side up and wipe any excess marinade off the rind to avoid burning. - Brush with a light layer of olive oil and a sprinkle of Murray River Salt. - Place in to a preheated oven set to 200C for 1 hour. - Once the crackle has set and the meat is tender remove and allow to rest on the bench for 10-15 mins. - Slice thinly with a sharp knife and serve straight away 🤗 #cheatmeats #murrayriversalt #porkbelly #pork #porkchops #salt #porkrecipes #roastpork #bbq #roastedpork #australianpork #barbecue #meat
