Pasta salad with homemade basil pesto 💚 This pesto pasta salad is INCREDIBLE! The star of this salad is definitely the delicious basil pesto. It is so easy to make and only requires a few simple ingredients 🙌🏻 Ingredients: 350g pasta of choice (uncooked) 1 cup cherry tomatoes, halved 220g cherry bocconcini, halved 1 handful of rocket Chopped basil Parmesan cheese Basil pesto: 1/4 cup pine nuts, toasted 2 cups basil 1 tbsp minced garlic 1/2 cup parmesan cheese 1/3 cup olive oil salt/pepper To make the basil pesto, add all ingredients to a blender or food processor and blend until smooth. Cook pasta as per directions. Ingredients: 3/4 cup applesauce 2 eggs 1/3 cup maple syrup 1/3 cup melted butter (you can use DF if needed) or melted coconut oil/olive oil 1/2 cup almond milk or milk of choice 1 cup self raising flour 3/4 cup oat flour (just blend oats until they form a flour) 1/2 cup rolled oats 1 tsp baking powder 1tbsp @SPICETUB banana bread spice mix or spices of choice Optional: I mixed some spice mix with granulated sugar to add on top along with some rolled oats Method: 1. In a bowl combine the applesauce, eggs, maple syrup, butter and milk. 2. Add in the flours, oats, spice mix, baking powder and mix. 3. Add to a lined loaf tin and bake at 180°c for 35-40 minutes. 4. Place mixture into a silicone donut pan and bake for 18 minutes or until cooked. 3. Combine the sugar and spice mix. Let cool slightly then brush lightly with butter and coat in the sugar spice mix.
