20 Minute Chicken Fajita Taco 🌮 Ingredients: - 4 chicken thighs, sliced - 1 red capsicum - 1 yellow capsicum - 1 red onion - 2 cloves garlic - 1 avocado - 1 tbsp chilli powder - 2 tsp ground cumin - 2 tsp paprika - 2 tsp sugar - 1 tsp garlic powder - 1 tsp onion powder - 1 tsp salt - 1 tsp msg (optional) 1. Combine chilli powder, cumin, paprika, sugar, garlic powder, onion powder and salt in a bowl. Stir to combine and set aside 2. Remove avocado skin and seed, place in a bowl with the juice of half a lime and 1 tsp of the fajita seasoning. Smash with a fork then leave in the fridge until ready to serve 3. Add sliced chicken thighs, half the olive oil and the juice from the other half of the lime, mixing to combine and setting aside to marinate for 5 mins 4. Slice all capsicum (bell pepper) and onion into strips, lay out in a baking tray lined with baking paper, drizzle half the olive oil and remaining fajita seasoning over top, toss to fully combine and bake in an oven preheated to 200°C for approx 12 mins or until cooked through and slightly charred 5.
