Slowcooker Chicken Fajita Pasta 🍝🌶️ (591 calories) This is one of my go to meal prep and relatively cheap to make. If you like chicken fajitas and pasta then this is the perfect combo for you. I love sweet peppers but you can use regular bell peppers. Ingredients - 3 x chicken breasts - 1 tsp cumin - 1 tsp oregano - 1 tsp chilli - 1 tbsp paprika - 4-5 garlic cloves crushed - 1 x onion - 2 x cans of chopped tomatoes - Red pepper - 3 tbsp of soured cream - 300g dry penne pasta - 200ml + chicken stock - you may need more keep an eye - 100g cheddar cheese - Salt and pepper - Fresh coriander / chilli to garnish Method: 1. Add the chicken, onion, herbs, spices, garlic and tomatoes to the slowcooker for 3 hours on high or 6 on low 2. Add in the pasta, peppers and stock. You can also add the sour cream at this stage but sometimes I add at the end. Keep an eye on stock you may need to add more depending on timing. 300ml is the max 3. Cook the pasta, peppers and stock for 45-50 minutes. Stir in cheese and sour cream if adding at the end 4.
