My notes: I found it challenging to work with croissant dough in the current hot weather. Additionally, the lamination process was difficult to execute in a home kitchen. Rushing the process in a day may have also contributed to the struggles. As you can see, some of the pastries turned out to be a little cramped, preventing proper baking and expansion that would have resulted in a flakier pastry. However, the pastries from the third baking round, of which only a few were left, turned out quite good as they had more space to expand. The cream cheese icing sugar garnish was a bit too sweet and I could have used less cinnamon butter. I did like the apricot marmalade dressing.
