Single Serve Mini Focaccia I found this amazing mini casserole dish for only £2 at a charity shop, so we are going to make good use of it by making the perfect single-serve focaccia. Sometimes I just want my fix of fresh bread on the day and this recipe is perfect! Tools: 1 ramekin/ mini casserole dish Ingredients: 55ml Water, lukewarm 2tsp Honey/Maple Syrup 3g Instant Yeast 70g Bread Flour Pinch of Salt Olive Oil 1-2 Cloves of Garlic 1 stem of fresh Rosemary 3-4 Green Olives Flakey Salt Steps: 1. In a bowl, combine water and honey/maple. Sprinkle in the yeast then stir to dissolve. 2. Add the flour and salt. Mix until you have a wet dough. 3. Cover it with a piece of clingfilm or wet towel and let it proof in a warm environment for 2hrs. Or you can leave it in the fridge overnight. When it doubles in size, you’ll know it is ready 4. Add 1-2 tbsp of olive oil to the empty casserole/ramiken dish. Swirl the oil around so it covers the surface on the inside. 5. Transfer the dough to the dish and do a few coil folds. (Coil folds: put your hands under and in the centre of the dough and lift. The two ends of the dough closest to you and furthest from you should droop over your hands and naturally want to fall back into the dish. Place the dough back down with the droopy ends tucked under the rest of the dough. Rotate and perform this again and again. You should start seeing the dough become tighter and smoother but don’t do it so much that it pops the top of the dough). 6. Add your choice of toppings or the garlic, rosemary, and olive combo. Hit it with some flakey salt. Leave it for 20-30min covered. 7. Pre-heat the oven to 175°C 8. Add a generous amount of olive oil to your hands and dimple the dough with your fingers. Big air bubbles should start coming to the surface. 9. Bake this at 175°C for 20-25min. 10. It may need some help around the edges, so if it’s stuck, stick a knife around the edge and it should pop out golden all around! #minibread #quickrecipe #minifocaccia #singleserve
