I love quinoa 🫶🏼 And if you’ve been following me for a while you’ve probably noticed that I prep a big batch of quinoa each week for my nourish bowls 🥰 Recently, I’ve been craving a little more flavor and love this quinoa salad so much! It’s so easy to make. You really just chop in a few fresh ingredients to your quinoa and season it. It’s so good for lunches, or as a snack and I’ve been bringing it to picnics with friends and everyone has been loving it 🤍 INGREDIENTS ✨4 cups quinoa, cooked ✨1 cup grape tomatoes, halved ✨1 large handful fresh parsley, roughly chopped ✨3 spring onions, thinly sliced ✨1 red bell pepper, diced ✨1/8 tsp garlic powder ✨salt and pepper to taste ✨4 tbsp extra virgin olive oil ✨4 tbsp balsamic vinegar HOW TO MAKE Add your cooked quinoa together with all other ingredients to a bowl and toss until combined. It’s great on its own or as a base in your nourish bowl or as a side dish. I keep it in an airtight container in the fridge for up to 3 days. Here’s how I cook my quinoa: To get 4 cups of cooked quinoa, add 2 cups of uncooked quinoa + 4 cups of water and some salt to a pot, bring to a boil and immediately cover with lid, reduce heat to medium-low and let simmer for 10-15 minutes until cooked.
