30 days of one pot recipes 👩🏽🍳 Day 16: creamy chicken & sundried tomato orzo 🍅 452 calories • 50g protein • 43g carbs • 8g fat Ingredients: (3 servings) 420g chicken breast - 3 x 140g 120g orzo (uncooked weight) 60g lightest Philadelphia 60g reduced fat cheddar 200g passata / chopped tomatoes 1 chicken stock cube with 350-500ml water 30g sundried tomatoes 1 red onion 3 garlic cloves Mushrooms, spinach Chicken seasoning; paprika, salt, pepper, garlic, parsley Salt, pepper, parsley 1. Slice chicken into even cutlets and season both sides, fry on both sides in the pan until cooked through (around 12-15 mins). Whilst cooking prepare your veggies. Once cooked put to one side. 2. Deglaze the pan with some water, add in your onion and soften before adding mushrooms & chopped garlic. Let them cook before adding in your chopped sundried tomatoes, let the flavour release and toast your dry orzo for 1-2 mins. 3. Add in your passata, chicken stock with water, handful of spinach and some salt and let it simmer and mix occasionally. Once the spinach has wilted add your Philadelphia and mix until melted. This all takes around 15 mins for the orzo to cook and sauce to thicken. 4. Once the orzo is cooked add in half your cheese and mix that through, add back in the cooked chicken and the rest of your cheese with some parsley. Pop on a lid to let the cheese melt and the chicken heat for 5 mins and enjoy! This was SO good, I’ve saved a portion for tomorrow so fab for meal prep.
