These are also so great for meal prep, you can just pop them into the air fryer to reheat them 🙌 Some of my favorite toppings are salsa, sour cream or plain greek yogurt, diced avocado and hot sauce! Ingredients: - 1/2 cup white rice - 1 cup water - 1/2 of a red onion - 5-6 bell peppers - 1/2 tbsp minced garlic - 1 tsp olive oil - 1 lb lean ground beef - 15 oz can diced tomatoes - 1 packet taco seasoning - 1/2 cup shredded cheddar cheese How to make it: - Add rice and water to a saucepan, cover with a lid and bring to a boil. Once boiling turn heat down and simmer until the water is absorbed. - Dice red onion and remove the tops and seeds from the peppers. Dice the leftover pepper around the stems. - Heat 1 tsp olive oil in a large skillet and brown ground beef. - Add diced onion, diced peppers and minced garlic and cook 2-3 mins until softened. - Add diced tomatoes and taco seasoning and stir well. - Add the cooked rice and stir until well combined. - Add the filling to the peppers, then air fry at 375F for 10 mins.
