Potato Gratin Recipe: - 1.2kg potatoes - 300ml whole milk - 300ml double cream - 2 garlic cloves - 1/2 tsp salt (or to taste) - 1 tsp black pepper - 1/2 tsp nutmeg - 2 sprigs rosemary - 300g grated cheese of choice (cheddar or Gruyère) Method: - bring the milk, cream, seasonings, rosemary and garlic to a boil - Add thinly sliced potatoes - On low simmer allow potatoes to partially cook for 8-10 mins (this releases the starch from potatoes into sauce to thicken it and avoid curdling in the oven, also reduces total cooking time) - Then layer potatoes, cheese and cover with sieved milk mixture, top with cheese - Cover with foil and bake in a preheated oven at 180C for 30 mins - Uncover and place back in the oven (increase temperature to 200C) for 15 mins till golden and bubbling. #potatorecipe #potatogratin #scallopedpotatoes #potatodauphinoise
