Candied Yams!? Actually, candied sweet potatoes. Confusing, right? Ingredients 2 lbs. Sweet Potatoes 1 c. Water 4 Tbsp. Orange Juice 3/4 c. Brown Sugar 1 c. White Sugar 1 Stick Butter, unsalted 2 Tbsp. Vanilla Extract 2 Tsp. Cinnamon 1 Tsp. Salt 1 Tsp. Nutmeg 1/4 Tsp. Ginger 1 1/2 Marshmallows, optional Instructions - Wash, scrub and peel your sweet potatoes and slice them into 1/2 inch rounds. In a medium pot, over medium-heat, combine sweet potatoes, water, orange juice, brown sugar, whiter sugar, butter, vanilla extract, cinnamon, salt, nutmeg, and ginger. Mix, everything until each sweet potato is coated. Allow sweet potato liquid to come to a boil. Cover the pot with a lid, but leave the lid ajar to allow steam to escape. Reduce heat to low, and simmer for 40-50 minutes, or until the sweet potatoes are tender when pierced with a fork. Remove the lid, and transfer the sweet potatoes to a baking dish, set aside. Increase temperature to medium heat and allow the liquid to reduce and thicken, about 10 minutes. Pour syrup over candied yams. (OPTIONAL) Preheat oven to 400° Fahrenheit.
