Take 1 tbsp of the barley malt syrup or sugar, water, and yeast and combine in a large bowl. Let stand for 10 min or until foamy. 2. Once foamy, add your flour and salt. Mix until dough starts to form. Transfer to a floured countertop and start using your hands to knead until flour is fully incorporated. 3. Transfer dough to an oiled bowl and let rise for one hour. 4. After the hour, punch down the dough and transfer again to your floured countertop. Shape into a ball and divide into 8 equal sizes. Use a scale to make sure they are all the same size. 5. Take each piece and shape into a ball. Oil your hands lightly and flatten your dough ball, poking a hole in the middle and stretch the hole to widen it up a bit. 6. Place bagels onto a lined baking sheet and let rise for 30 minutes. 7. Heat up a large pot with water, once it’s simmering, lower the heat and add the remaining barley malt syrup(or sugar) and the baking soda. 8. Add your bagels in batches simmer on each side for about 1 minute. 9. If adding toppings, add immediately after removing from water. 10. Place bake onto baking sheet and bake at 400F for about 20 minutes or until browned.
