Day 13/30 Casserole series Pierogi and Kielbasa Casserole 2 boxes 12 count pierogi (24 total) 1 package kielbasa 1 tbsp olive oil 2 tbsp butter 1 tbsp flour 1 small onion, diced 3 cloves garlic, minced 10.5 ounce can cream of chicken soup 1 cup chicken broth 2 cups shredded cheddar cheese 1 tbsp Dijon mustard Salt and pepper to taste 2 tsp sage Sliced Green onions to garnish Preheat oven to 350°F and lightly spray a 9x13 baking dish. Add the oil to a skillet over medium high heat. Add the onions, season with salt and pepper. Cook a couple of minutes, add the garlic and kielbasa. Cook until the kielbasa is browned, a few minutes each side. Meanwhile add the pierogi to the baking dish. Pour over the kielbasa and onions. In the same skillet add the butter. When melted whisk in the flour and cook 1 minute. Pour in the chicken broth while whisking until smooth. Add in the cream of chicken soup, seasonings and 1 cup cheddar cheese. Stir until smooth and pour over the pierogi. Cover and bake 30 minutes. Sprinkle the remaining cheese over and pop back in the oven to melt the cheese. Top with sliced green onions.
